The game was from a time with mostly 4:3 monitors still, they probably leave it at default settings? The less the game shows the faster it goes is my guess.

The basic answer is that it's all you need - everything you need to see is usually right in front of you, or if it isn't, it's still in FoV at default because strafing for the extra speed doesn't have you facing that far off to the side. And tbh you wouldn't see much else of note, other than random bits of landscape flying by for most of the run, so it doesn't make a huge difference there either. As for lag and rendering, modern PCs run Morrowind well enough that you don't need to worry about that, especially since there's a timer plugin that removes loads so that runners with different builds have an even playing field.
