You are so FOS. the liquid is "Hooch" the alcohol byproduct of fermentation. Completely benign.

I love a sour sourdough. We never pour off the hooch. We stir it back in and feed the hungry starter. ❤

Yes, you can use starter straight from the fridge. Ben Starr has a video where he does just that.

interesting - if the acid is the enemy Nr1 for gluten network, how sourdough works then?! It is a really long fermentation time! I had several experience when the bread dough start to collapse, becomes too soft and dont hold its shape, if I ferment too long or add too much starter to the dough. One still can bake a bread, but one should place it in a narrow form. Still eatable, but not really fluffy.

Never seal starter it will break a sealed jar.

i keep my started in the fridge. Do i need to let it rise to room temperature before i feed it? or can i feed it immediately from the fridge?

Its NOT acid its alcohol. Just mix it in and all is fine.
