I also watch Kitchen Nightmares a lot and Chef Ramsay can identify if the food is canned, microwaved or not fresh even sometimes by just looking at it. Even in one episode of KN, he said that the microwave looks like on the blink even though he hasn't seen the kitchen yet.

Well the first one was simply sauteed while the one from kitchen nightmare was grilled. And he states that it is the first time he had a cooked Cesar salad...while in the other show he states this is a first for me a grilled cesar salad. He differentiates the two by the manner of which they were cooked, so there for both of them are a first. One being cooked in a skillet while the other on the grill. I don't think Gordon is that dumb that he would forget what he has tried or in the first case didn't. Also you don't cook lettuce. You can, but you shouldn't. Lettuce is filled with water which makes it soggy and tasteless.

Antonia had balls thinking she could make a gumbo--which takes HOURS to make--in 45 minutes. I make gumbo all the time and it literally needs to simmer for hours for the flavors to come together. Otherwise it's scorched flour and oil with no flavors yet

That’s exactly what I was thinking- Maybe her gumbo actually tastes good when she has the time to properly make it? I bet that was her shortcoming. There just wasn’t enough time to make a proper gumbo. I remember for cooking class senior year I wanted to make exactly what she did- a Mardi Gras Gumbo, for our “pick a state and make a dish from it” unit. Not only was Louisiana the first state to be picked (I ended up doing New York instead and my dish turned out excellent), but I was advised by my group members that if I picked Louisiana, gumbo wouldn’t work cause a gumbo can’t be made in 45 minutes… … Years later, I guess they were right. Thank you cooking class group members.

@@mackenziewoloschuk7375 Oh hell yeah; I’m glad they advised against it, and I guess I’m also glad Louisiana was the first state picked by someone else, otherwise I could have decided to still go through with the gumbo plan despite the warnings. One day, though, my partner and I plan to make a proper gumbo. Sure it’ll take 3-4 hours but I bet it’ll taste great.

I miss the tone of the signature dish challenge where Chef Ramsay tasted the dishes one by one. The atmosphere felt tense in the early seasons.

Agreed, even aside from the cringe live audience, it felt, I don't know, more authentic? For Gordon to just be straightforwardly sampling what the contestants believe to be their best dish, without any "points" or anything. Just tasting it and telling it straight. It's before they've even started the competition "proper", no clue why they felt the need for him to start scoring IMMEDIATELY.

Hey, pumpkin soup is a thing. Try stewing your hen, making a creamy soup with the broth, and then buy two of the pie pumpkins. Roast one, scoop the flesh, and blend it into the soup. Make sure it's super concentrated too. Pour the soup into the second pumpkin, pick the meat from the hen, and mix it in, maybe add some squash dumplings as well. Then roast the whole pumpkin together with the soup until the pumpkin flesh is tender. The liquid from the pumpkin will thin down the concentrated, creamy soup and a long cooking time lets the flavors blend. Serve the whole thing at a party or just for the family. A really fun presentation and a lot of good texture and flavor.

Some basic rules for the signature dish challenge: -Don’t serve frozen/canned/pre-packaged food EVER -Don’t make too complicated or unique a dish unless you KNOW you’ll execute it well. -Don’t make spicy food as your signature dish. Ramsay doesn’t do well with super-spicy stuff (as shown here and on his Hot Ones video) -Don’t argue with him when he says he doesn’t care for your dish! -Don’t make too simplistic of a dish, unless you’re going to find some way to elevate it or make it unique beyond the basic dish. Any others I’ve missed!

I have a theory that sometimes the contestants purposely make bad dishes so that they can impress people more by what they can really do later on. Sort of like making them look like someone to underestimate only to show they're a real competitor. Not only does starting off with a poor dish make for entertainment as, let's face it, a lot of people watch the terrible dishes and like seeing Ramsay's reactions to them, but that entertainment might make them feel like they would be more likely to stay on longer if they go from bad to amazing.

​@@Clay3613you're missing the point, if you cant cook from scratch whats the point. youre letting one of the top chefs in the world see what you can do, and someone else does half the work. Its not that the food tastes bad, its that its not a measure of your talent as a cook.

@@oshwaflz One of the issues here is if your signature dish is a pasta dish. You have 40 minutes to make the signature dish, and pasta needs to rest in the fridge a minimum of 30 minutes. It really needs at least an hour. So at best, to serve a moderatly decent pasta, that leaves you with 10 minutes to make the dough, then roll out the dough, then cut the pasta, then cook the pasta, then assemble the saute. Knowing this, I can't believe HK doesn't have some pasta dough resting in the fridge for the chefs to roll out & cut. Same with like pizza dough, bread dough, filo, etc. So, I could accept using a store-bought base, especially in a pasta. Because there the techniques involved in making a really good pasta go well beyond the pasta itself. Was the water properly salted. Is the pasta cooked al dente. Was the cooking water used in the sauce. Is there too much sauce, or is it too runny. Are the other ingredients balanced. Was the protein seared properly. How was the protein integrated. Was the fond used with a good deglaze. Are the herb portions well balanced to enhance rather than overpower. Is it just the right amount of heat to open the sinuses enhancing the flavor, but not overpower the dish. Was there an option to choose pecorino romano or parmesean, and if so, did you choose the right one for the pasta. I do a lot of cooking, and I can tell you from a technique standpoint, it's far easier to reverse sear a steak, make a pan sauce, and knock out some good veg than it is to make a good pasta. That being said, I don't think these bozos made a good pasta AT ALL.

I said this in another video on this channel, but I often say the signature dish challenge is rarely, if ever, a tell-all of how someone will do on the show. There have been some phenomenal signature dishes from people who end up as early outs. And then there are some atrocious signature dishes from people who’d either make the Black Jackets or win the season. While it is fun to get a first glimpse of the chefs from this challenge, I wouldn’t use it as a litmus test for how they’ll do.

I think it’s more a way for Gordon to see who he’s dealing with. Are the egotistical? Open to criticism? Are they bold? Reserved? Do they take short cuts? Do they know their own limits (in this case time)? Etc etc

I actually noticed, ever since Season 14 when Meghan got the perfect 5 on Signature Dish, we all know that this person's gonna win the season or going further when they got 4 or 5 on their Signature Dishes. Meanwhile, if the person got 1, they're going to be eliminated earlier.

Other than the season 14 girls, who almost went in order of how their signature dishes went. Other than Allison who got the only 3 and she beat two people that had 4's. The two 5's made the finals and the three 1's were the first ones out.

Dishonorable Mentions are as follows: Danny in S5: Mahi Gone Bananas Joseph in S6: Dish wasn't that bad, but a solid prequel to the most iconic moment in HK history. Andrew in S7: Bland steak tartar, becoming branded HK's Hannibal Lecter Nilka in S7: Used half a bottle of tabasco sauce for her chicken wings. Dan in S11: Eggs Benedict that'd make Julia Childs turn in her grave Sebastian in S11: Shrimp and Salmon Corndogs...I hate seafood, but even people I know who do like it, think that sounds disgusting. Frank in S13: Bone marrow Mieka in S14: "It isn't half bad...it's all bad." That insult is straight-up Statler and Waldorf-territory. Side note: Curtis might be the luckiest person in HK history, since I don't think he had to taste Antonia's signature dish, it looked like it only got passed around to the chefs still in line.

I’m surprised the Suzanne’s dish from season 6 wasn’t on the list. She made a risotto, claiming that her food is ‘perfect’, but when Chef Ramsey told her that the rice is very undercut she had the gall to argue with him that it wasn’t. She refused to believe that her dish had anything wrong with it

It makes sense why Gordon is so particular and strict about food. I’ve eaten at Hell’s Kitchen in Vegas and Ramsey burger and it was one of the best meals I’ve ever had. The beef Wellington was beyond amazing and so was the Mac and cheese.

Had Antonia stayed in HK for the first service, if her signature dish was her at her best, I can almost safely assume that she probably would of been the first boot! Also, let's be honest, we all had trouble paying attention to the S3 signature dishes because we were all too busy trying to catch a glimpse of JR. And I cannot believe you didn't include Andrew the Serial Killer's steak tartar from S7!

Not too plugged in on HK, but from what I've seen it really stands out to me that the same person in season 3 who made one of the worst first impression you could make by serving frozen food to Ramsay as his signature dish went on to win the whole thing. Every time I see S15 i'm always reminded that Hassan was robbed *H A R D* that run. He was a good chef, an amazing leader, and didnt have any bad services so he was almost guaranteed a spot in the Black Jackets, until he was moved to the red team. I understand why Ramsay swapped him to the red team (considering by that point the red team only had 1 or 2 completed services, one of those being because the blue team helped them out) but god did that team screw him over hard, and it led to his worst service that got him kicked off.

Something I find interesting about S14s challenge was the blue team never had a bad dish with everyone getting 3s and 4s. While, the red team got 2 5s from Meghan and T, they also had 3 1s from Crissa/Monique/Mieka who cost them the challenge.

In a future Hell’s Kitchen season, preferably another All-Stars or battle of the best contestants(Winners, Runner Ups, Notable Special Mentions like Sterling or Nikki from S19), have the contestants turn all the notable worst signature dishes into really great signature dishes. Would be interesting to test their skills in turning something previously bad into something Gordon Ramsay will praise.

i think people forget that gordon didn’t hate raj’s dish. he said it tasted very good, it just needed a presentation change. raj CAN cook, he just doesn’t have the spatial awareness to know about times and looks. it sucks bc had he not had some stupid partners, he probably would have done very well.

You have to at least respect Guy for having the balls to say, to Ramsay's FACE, "I messed up the sauce, don't try it" instead of admitting it AFTER Ramsay tries it
