I build villages and filled them with villagers. It's always a fun thing to do. To flatten the area, mark areas where buildings will be placed and then put villagers inside one by one.

I think, when talking about villagers, a lot of people forget that they're quite literally antisemetic caricatures. Not only because they have big noses, thick unibrows, are greedy (the color of their eyes is literally the same as the color as their currency), but also because iron golems are a direct reference to jewish folklore in which people built golems to protect their vilages.
