♡ Hello everyone and happy birthday to me... 🥳 ✰ 😍 on February 24th I turned 38 years old and I have decided for the occasion to prepare a cake that has a special meaning for me and to which unique emotions are linked that take me back in time to when my grandfather always prepared it for me for my birthdays when I was little: I'm talking about of the delicious Mulino Bianco-like lemon cake with a very delicate lemon cream both in the center and on the surface which makes it very fragrant and delicious.😍 Its particularity lies precisely in the composition because there will be a shortcrust pastry base covered with lemon cream, finally a very soft layer of lemon-flavoured margherita cake decorated with lots of good curls of cream... it's really special. The preparation seems long and difficult but in reality it is very simple and once you try it and taste it you will be very happy and you will say that it was really worth it. 📝 INGREDIENTS for the lemon custard:
✔ 100 g of sugar
✔ 2 large eggs at room temperature
✔ the zest of an organic lemon cut into strips
✔ 500 ml of whole milk
✔ a sachet of flavoring powder with natural vanilla "paneangeli"
✔ 40 g of “00” flour
📝 INGREDIENTS for the pastry:
✔ the grated zest of an organic lemon
✔ tart and biscuit mix - quick and easy recipe - Brand: MOLINO ROSSETTO
✔ 125 g of soft butter
✔ 1 whole egg plus 1 yolk (taken from large eggs)
📝 INGREDIENTS for the lemon margherita cake:
✔ 2 large whole eggs at room temperature + the egg white left over from the pastry
✔ 60 g of granulated sugar
✔ 1 pinch of salt
✔ grated zest of an organic lemon
✔ 50 g of melted butter
✔ 10 g of vanilla baking powder
✔ 100 g of "00" flour
✔ 30 g of potato starch
♨ COOKING:
✔ 24cm diameter tart mold
✔ 165° in preheated oven, in the center for approximately 35 minutes
