Marshall that was an exceptional meal that you and Chef Gene had at the Fat Cow. I love how the meals are drawn from Patrick's Travels. A Celebration of food and Travel that Patrick shares on a plate with his guests. I also have to say for you to have the two chefs there giving great culinary insight really shows the food is really quite like a work of art on The plate.

Degustation must have arisen from the tapa bars of Spain where you get to pick bite-size samplers. The Avant Garde of the culinary world found a way to experiment on food and have their clientele taste it. It is a way of finding out if their experiment can get traction and be marketed as a new dish item. Mr. Co is in the forefront of this movement in the Philippines where young chefs come up with new creations. What you had was a meal though...degustation was the inspiration.

@@marshallbuttersvlogs6880 Very high-end destination restaurants whose chefs have garnered James Beard Awards in Culinary Arts are usually the ones who dare to offer a degustation in their menus. This is because the offering of a degustation selection appeals to the kind of clientele who are jaded and tired of the traditional offerings in traditional restaurant outlets. So, armed with unsatiable curiosity, these chefs come up with literally bite-size items that come in dessert saucers that arrive in a series of 6 to 8 degustation items. Some come in a spoon or a Chinese spoon, as they usually are eaten in one gulp. For a chef to offer a degustation, one has to have the reputation that will attract a clientele willing to pay for and try their degustation...because a degustation usually will leave a diner leaving the restaurant hungry. This is a caveat when ordering a degustation. Just by the size of prawns in the Philippines, I just don't think a chef could feature it on a degustation. If you get my drift.

6:16 The owner/chef needs to learn proper etiquette when talking to customers or guests. His in your face way of talking to you guys really is improper. Especially with his hands on the tables and talking over the food and near your faces. He seemed to have forgetten that there is still a pandemic.
