Waystones can be set up that are accessible by anyone at all times through a "Global Waystone" check box when you are naming your waystone, however this still requires specifically setting them up in advance and none of these generate naturally. If it did generate naturally, it'd likely have a pseudo-gibberish name like the naturally spawning village waystones do.

A 5:29 if you look at the speedrunners screen you can see that he is at 9/10 food bars which slightly proves your point wrong but he could have switched modes sometime in the middle so just makes the run a bit more confusing as he doesn't eat any food.
