Hi, i just picked this awesome fighter up and I'm a little confused about Vanilla Ice. I have a Cool Ice in my game, is this a different variation, or an original name for the character?

Cool Ice is the copyright safe name for Vanilla Ice. If you have the US version of the game, most of the characters (including stands) will go by their copyright safe names but they are all the same characters. TLDR; Same character.
