I am a retired owner/operator of a hot dog cart and would make red onion sauce every day. I must say your recipe is darn close to my own. Thank you Sir! I lived off these when I was a Marine on the USS New York for fleet week in Staten Island and Manhattan 2011. I would eat 2 of those dogs with onions and a Powerade for basically breakfast cause I was sleeping off my drunk the night before. The burps that you have all day taste like the onions making you want more. Haven’t tried the recipe yet but will soon. I’ve been searching for this for awhile. Once again thanks bud. I will be making this one day... if you would take 1 tip from a well aged cook, I'm a grandmother... try using a Potato Starch instead of Corn starch...WHY?? I'll tell ya 🙂.. corn starch ,when it get back to room temp, goes watery every single time and you have to add more to make it thick again... Potato starch won't do this... it will stay gravy even when you can it or freeze it or even just pop a bowl of this onion reish back in the fridge to use next week.. and this sauce you made will store a fairly Long time because of the sugar and vinegar ... I certainly appreciate you sharing this recipe... thank you 😉👌

My mom and grandma would take me to bingo with them on Long Island back when I was a little kid (mid 1970s). There was a lady there with a hot dog cart that had these onions. I’ll never forget them. Definitely gotta try this!

Many, many years ago, back in the '70's, we used to get dogs from a guy, a NY transplant, who sold 'em out of a panel van at an intersection leading from Albuquerque to Rio Rancho, NM. I am a native southern boy with absolutely amazing memories of pushcart hotdogs when I visited New Your City as a young kid. Something abut dirty water hot dogs and that amazing onion sauce. I can tell you how many southerners I have turned on to this great condiment. You certainly can't find it in markets here, but I have made so many variations of this over the past 30 years. I sell my hot sauces at local farmer's markets and curb markets in my local area. Often times, I make a couple of dozen jars of red onion sauce and take them to the market. The people that buy it ALWAYS come back on future market trips and buy additional jars. Unfortunately, I don't always have it there with me and the people who have previously purchased are pretty upset when I don't have it. Thank you for your video and recipe. You include a few spices I have not used and I can't wait to try it your way. Again, thank you for your instruction.

The interesting thing is . A lot of New York City water is delicious and my sand hog relatives would say that the lucky New Yorkers are the ones tapped into a hard rock aquaduct that was built in the 1700s. I do know that the water we had in San Diego when we moved there in 1972 was horrid. My grandmother would complain how she hadn't been able to make a decent pot of spaghetti since moving west. Then she realized it was the water and would boil all her food in bottled spring water and it certainly improved ten fold at least. Grandma was a smart lady and I would pay good money for a plate of her pasta that I didn't have to stand all day in the kitchen making and put up in the fridge for two, three days for it to be just right. But she was right. The water is everything

Born and raised in NY and I have to tell you, your onion sauce looks really good. Whenever I get one from the vendor I get it with everything; kraut, ketchup, mustard and top it off with the onion sauce. It's my favorite next to a chili dog which I've actually added the onion sauce on top and it's killer. Thanks for sharing.

Going to make this this weekend🤙. Tip hot dogs when start in pan add few tablespoons water at first so steam, cook inside then outside will cook after evaporated. And on grill get loaf pan on top shelf with hot water don't boil, then when someone wants a dog put on grill for marks, takes 1 min cooked all the way through no burning👍

I've made this a few times. Instead of using separate seasonings, I've simplified it with using Ketchup and Chili Powder. Makes for an easier cook and comes out very good for dogs and brats.

I’m going to try this. I make a spicy one for Jamaican food. It’s called onion spicy & it cooks in vinegar sugar chilli and thyme until just soft. 10 min. Then serve it cold 👍🏴🇬🇧

Just found your channel and this wonderful recipe. When I was just out of high school I was waiting for the Army recruiter to complete my enlistment in the coming October. A neighbor of mine got me a summer job at the auto parts warehouse where he was a manager. The people were great - all Teamsters - but I hated the job... except for two things. At lunch time the "roach coach" would roll onto the lot and sell a sausage sandwich covered in "red onion sauce." The second best thing was that we were right across the street from a Wittman's chocolate packaging shop. I always got invited to sit at their picnic table in the shade of the only tree on the block... and I always ended my lunch with one of the Wittman girls wiping that sauce off my chin. I'm telling you - this is the sauce that dreams are made from! Cheers from Philly

Just watching this video, is addictive! I want to make this recipe, really bad. The sauce, the backtrack, and your New York accent narrating, makes it addictive! Yeah, you're more of a Oscar Madison kind of guy, but that's ok. You give us the freedom to use & make any type and brand of hot dogs, buns, and condiments we want to use. It's funny, because I was nodding along when I was hearing of the same ingredients as I did my first time trying to emulate hotdog onions. Only I boiled them instead of frying (no oil needed) and the tomato paste mixed in sooooo easily. Bitter from the paste, so cut it with sugar. Hate the stank of vinegar, so rather than putting it in at the end, I put it in earlier so the stank boiled off but left the tang. No starch for thickening, as I just let it boil down to concentrate the flavors and thicken up naturally. And I confess, I did let them thicken quite a bit to become almost "sticky", so I could eat them and not wear them. Didn't do much with spices, and the mix you had looks reeeeally good (the cinnamon surprised me, but yeah!), so I think I'll do that next time. Whatever I didn't use on hotdogs, I just ate with a spoon rather than fridge it. 😂😂😂

I bought Blackie's hot pepper relish and Walter's sweet mustard and tried them on my hot dogs...I guess ya gotta go to those joints and have their original dogs to get what all the people who rave about 'em are talkin' about. I wasn't impressed with their signature condiments. BUT THIS... this recipe is A-BO-LU-LY fantastic! It reminded me of hot dogs I had when I stayed in Secaucus and worked in Weehawken and would cross over through the Lincoln Tunnel to Manhatten and grab me a few hot dog cart dogs to take back to the Secaucus Embassy Suites. That oughta let you know how much I like NY dogs... thanx for puttin' this recipe online. I'm on the west coast and this kicks our dogs up a few notches!!!

Nice recipe.. I've not seen Mustard Powder in a NY style Red Onion Sauce before. You say use fresh garlic. I agree. The jarred garlic I do not think has much flavor. However for this sauce, I do get lazy. I use Ketchup, Chili Powder and my current favorite hot sauce is Choula. I like the ease of preparation.

I've made this and it is fire! 🔥🔥 I have also developed a 15 minute version in case you can't wait for the full hour. Put two sliced onions on a small pan on medium heat. Add 1/4 cup of vinegar, a pinch of salt and enough water to cover. (pre-boiling the onions dehydrates them and the vinegar will keep them crunchy!) After 7-8 minutes almost all the water should have evaporated. Add a tbsp of neutral oil and saute them for 1-2 minutes. Once they get some color, add: 1/2 cup of ketchup, 1/2 cup water, 2 tsp of curry powder, 2 tbsp worchestershire sauce, salt, pepper and cayenne pepper (optional). It shouldn't need any more sugar as the ketchup has enough. In low heat, stir and let it boil down until it thickens into a glossy sauce. Tastes great as a topping for hotdogs and even burgers.

Being from southern Ohio, we had hot dogs with "hot dog sauce" made with ground beef, spices, etc....and it was NOT chili. Sometimes we also added Cole Slaw. Hog Dog Sauce from the local "Shake Shack" was to die for. I remember mom buying it by the pint to make hot dogs at home. Of course, all things must come to an end. The crazy guy who owned the place burned his Shake Shack down to collect the insurance money. (He may still be in prison to this day; I'm not sure.) The recipe was never shared, so that was the end of that particular wonderful hot dog sauce. I didn't see this onion sauce until I moved to NYC in 1983. When I first saw it being served by the vendors, I thought it was simply ketchup mixed with cooked onions, but after tasting it, I realized it was something different entirely. Your recipe here looks wonderful and I hope to make it some day. Many thanks.

Best condiment recipe ever! Thank you for this -- you cannot buy anything like it in a store on the west coast. Normally I will settle for a good Mexican salsa on my hot dogs and quiche, but this has to beat that. It breaks my heart when people in the U.K. refer to a New York-style hot dog as something with nothing but ketchup and yellow mustard on it. Not even onions or kraut? No.

Not my favorite, but I do like variety! For my money you can't beat a North Jersey Texas Weiner ala Libby's Lunch, or Hot Grill. That said, I get a hankering for pushcart New York dog from time to time. I think sweet onions are not as good as regular yellow onions for something cooked down this much. As far as the dogs go, my favorite is pork and beef, natural casing, but for this, it's got to be a skinless, all beef, dirty water dog! Thanks for a great recipe!

I use only the best dogs sabretts with grilled onions and slow simmered bush baked beans.grill the dogs till the way you like. Toast buns on grill too. Put dog on bun top with onions then top with the beans. Soooo goood. Use the extra beans as a side top with the extra onions .yummy to the tummy.

A vendor from NYC sold Boar's Head™ hog dogs with string attached with this onion topping. A buck a dog...longer than the bun... The mechanics in my shop bought 5 at a time everytime he came. When he didn't, he were sold out... I liken these hot dogs to Nathan's Coney island. The consistency like coleslaw.

I’ve never had the red onion sauce. I see, and hear everyone really likes it. Will have to try it one day. You ever try fresh Horseradish the stringy kind on your Hot Dogs? Mustard no longer needed, ketchup, and relish not needed. It’s pretty good, gotta be fresh, and stringy HOT though. I enjoy the nostril burn, lol.

Ive got some on the stove now... There was a time id hit a Sabrett stand two, three times a day when i lived in marble hill. I cant eat like that anymore, but this recipe is already bringing back memories. The smell in here is unreal man, this recipe is the truth. Ive got a pot of water with an onion, a bay leaf, and some vinegar going next to it, going to try to clone a dirty water dog. Thanks boss

If anyone is traveling thru Connecticut on Rte I- 84 you have to stop at Blackies Hot Dog In Cheshire. Easy off and Easy on both ways East and West. The relish they use and used to make which is now outsourced is worth the stop. They also sell small jars of their relish. They are closed on Fridays due to the “ No Meat on Fridays “ catholic rule. I haven’t been there for awhile but they used to sell the hot dogs 2 for $5.00. Enjoy

You cook like I do. No matter how easy it is - I always make a friggen mess, and takes twice as long as it should. Woman hates it. Nice heads up though, I haven't had a NYC cart dog in 20 years. I do however require skinned dogs. Either local butcher or BoarsHead.

This classic hot dog sauce is very good. 4 cloves of garlic or 5? The pinch of cinnamon or not? Lots of little tweaks are out there. However there is a simple addition that really lifts it to the next level (for me anyway). Maple syrup. In a half quantity of this classic onion sauce, just add a good squirt of maple syrup and you will be amazed at the difference it makes. I've just eaten 2 for lunch with steamed and buttered bun, 2 slices of cheddar cheese, yellow mustard, egg mayonnaise and topped with the onion sauce. Delicious. Unfortunately I only had Australian red frankfurts so I'm off to the shop to buy some American style beef hotdogs to feed my son when he gets home from work.

5 cloves of garlic, and yes to the cinnamon. Everything can of course be adjusted to taste, buy the recipe as written tastes identical to the Sabrett brand.
