Chinatown version is “cheung zai bao” AKA “smol sausage bun” ... Chinese fam was figuring out how to cook with American ingredients like humble hot dogs from the grocery store. The bun is mildly sweet, crossed with the mad hot dog salt, so it was one of our favorite childhood snacks. Not the fanciest thing, but it helped with assimilation.

I miss these so much. Family moved out of Texas when I was 15, and it's been over 20 years since then. They don't really have Mom and Pop donut shops where I live out here, and the few that exist, none of them sell these. I also miss the BBQ, very few places out here with that, and none of them hold a candle to what was in Texas.

I was much happy to scroll and see you had made this recipe. I feel like I should like pigs in a blanket more than I usually do? It's the Pilsbury crescent dough that puts me off. It's always awkwardly chewy for this. Yours look so much better. Thank you.

The beginning really confused me. When I was living in Hong Kong we had these all the time, and in Australia we just have the cheap sausage roll version, I don't think its just Texas and Czech.
@vascr04 жыл бұрын
Texas style kolaches are similar to sausage rolls that are found around the world. However they originated in their own unique way. Kolaches were sweet pastries that Czech settlers brought to Texas in the early 1800's, usually filled with fruits. The dough was taken and wrapped around sausage and cheese to be turned into this, the klobasnik.

@@SimonWoodburyForget Yeah, its ok if that food is exclusive to that country, but not when its already spread all around the world
@vascr04 жыл бұрын
@@evasofia07 It has it's own name because it originated independent of other cultures' versions. It's not like the Klobasnik kolache is a derivative of a sausage roll from the UK, it is its own thing.

Even though most places you get them in Texas will call them "Sausage Kolache"... the technical term for them is "klobasnek". A Kolache is a Czech pastry, slightly hollowed out with a fruit (or any other sweet filling). A klobasnek is that same dough wrapped around a savory food item, most often Czech or German style sausage, but Ham&Cheese are very common as well. Buc'ees even has boudin filled klobasneks that are amazing.

The kolaches I grew up with in my family were made as a christmas treat, sweet walnut and apricot kolache rolls, and we still make them from the recipe that's been passed down to us. I was so surprised when I was talking about kolaches with someone and they thought I was talking about these, so it's nice to see this recipe. Now we'll have to make these kolaches for dinner and our normal kolaches for dessert 😂 P.S. You should try making kolache rolls if you haven't already, they're addicting and easy to freeze for later 😉

This is a common misconception among Americans that you call the "Pigs in a Blanket" a Kolache. It is actually more similar to the Czech pastry called a Klobásník. Both of the pastries use the same kind of dough, but the difference is that a Kolache is a pastry with a sweet/fruity dollop on top, and a Klobásník is kolache dough wrapped around some kind of savory/meat filling, typically sausage.

Czech here, just a few things: "Pigs in a blanket" in Czech is "prasátka v županu," which means "pigs in a bathrobe." I've never seen them in this kind of dough, because we usually make them in puff pastry. Koláč (sing.), koláče (pl.) is more koh-lah-cheh than koh-lah-chee. That being said, a koláč is more like a pie. By definition, a koláč, derived from kolo - wheel, is round. Agriculture is big in the Czech Republic, and poppy is everywhere. I guess the most typical topping for the buns would be poppy seed, but everything bagel is genius. I'm sure everyone who knows pigs in a blanket would devour this in a heartbeat. I know I would. How about chimney cake next? ;)

I've never seen these outside of Texas. They're something you can get at most donut shops. The dough is soft, kinda of sweet and paired with the delicious smoked sausage they're amazing. I love the jalapeno and cheese kolaches my local donut shop does here in downtown Houston. They're not kolaches the the strict Czech sense. They're a Texas thing and a must try if you visit!
@vascr04 жыл бұрын
The texas version is called Klobasnik, but we colloquially call them kolaches because nobody outside the hill country orders traditional czech kolaches.

I live in Eastern Iowa, my parents both come from NE Iowa. Growing up, my mom learned to make kolache from her mom, and they were always 1) closed face via the bread being tied across the top and 2) had a fruit filling. My mom learned how to make them and as an annual tradition, made them for family gatherings, whether Christmas or Thanksgiving and they are DAMN GOOD.
