Same thing with chocolate. Used to be a luxury, now you walk into a gas station and there's 200 different kinds of chocolate candy, chocolate ice cream, chocolate covered pastries or chocolate flavored drinks.

In Finland during the 16th and 17th centuries, when there wasn’t enough grain people would add wood bark to dough. At these times in Finland, bread was pretty much the only food that was eaten. This situation changed when Finland saw heavy starvation due to a harsh winter, and as a result people started to eat more diversly.

Was it much of that bark in bread? Because it's just fiber or celulose. We don't digest it but it can be helpful for guts. I hop it was not half of the volume

In Germany they apparently didn't care or rather regulated the stuff more efficiently, since there are quite a lot dark variations from rather fluffy to basically just a slab of dark slow cooked rye.

@@mystuff9999I despise American bread. I’ve always been a rye bread lover and I miss polish bread. American bread tends to have too much corn syrup added that gives it a sickeningly sweet taste, and some groceries don’t stock bread without the added sugar. Also keto “””bread”””” is disgusting

Which is super weird, there's so many actually tasty and nutritious additives for bread that were tried and tested during historical hard times in the past. Potato flour, tons of grains other than wheat, nut flours/meal, ect. All the sawdust does is add weight for appearance sake.

I recently learned that in Tudor times, floors not insulated with expensive carpet were instead covered by a very fine straw, called "thresh." Because it was so fine, it had a habit of migrating from one room to another. So doorways were built about an inch above the floor, with a wooden seam keeping the thresh from passing. This seam was called a "threshold." So, juat remember that whenever a big scary magic door or portal is called that.

Bread additives were mostly rumors. The sale of bread was surprisingly tightly regulated and most of the rumored additives would either make the bread impossible to bake, be immediately obvious, or be much more expensive than flour.

Pretty much the same reason “vanilla” is used to describe plain despite vanilla being very hard to grow and harvest. Vanilla is the most abundant ice cream flavor in history and at every shop.

It was the rye growing in soggy fields (ergot fungus), not the bread by itself. Some historical episodes of mass-hysteria are blamed on it.

That's funny about the bread being so hard it'll break teeth. In high-school their dinner rolls were that way. I used to wonder why they even bothered making them since 100% of them ended up in the trash. I once threw on down on the table where we were eating and it actually chipped the surface of the table. Actually took out a small chunk.

only in the states it's the standard. in most euro countries, especially france and germany, but also scandinavia, darker breads are more common, they're more healthiert too for having more fibre and protein, and less sugar.

I like it being boring it's a delivery mechanism for other yummy things, being boring means you can have lot's of variety in the toppings with out conflicts.

There's a great video on this where folks from the UK take jobs in a historical immersion site. They split into groups and became Victorian Era bakers. One group saw all the "additives" that were used for manual production and how horrible the work conditions were for bakers.

When you live in country were dark rye bread is still more common. We never had reason issue with bread going stale in past as it was made mostly once a year, well at least west and south parts, with hole in middle and dried. And then softened up by soaking in it in soup or porridge... Or by your spit in your mouth.

It’s also better for your teeth. Historically, hard grains put a lot of extra mileage on your teeth if not ground to a powder before consumption, due to them essentially being small rocks.
