Since a lot of you were asking, I threw the recipes into myfitnesspal and here are the nutrition amounts per serving. I estimate 3 servings from this recipe though you could probably stretch to 4. Recipe makes 3 servings - Chopped Chicken: 343 cals per serving - Rice: 273 cals per serving Sauces make about 10 tbsp - White Sauce: 71 cals per serving (about a tbsp) - Red Sauce: like 5 cals per serving (only the spices and lemon juice have a bit) Definitely a pretty solid meal. Eat more of the chicken to add more calories, use breast for a little lower calorie. Lots of options here! Also if anyone knows how to just share the link to a recipe on myfitnesspal lemme know!

If you create it as a food and post it to your diary, other users can see it. I would suggest naming it something like "Ethan's Halal Cart Chicken" so it's super specific and easy to find. Looking forward to trying this recipe!

A quick tip that adds a ton of flavor: I like to cook the chicken with a ripping hot cast iron to develop a good crust, which invariably causes bits to stick to the pan. At the end of each batch I deglaze the pan with chicken stock, which develops a beautiful pan sauce almost instantly. I toss the chicken in the sauce before removing and move on to the next batch. Highly recommend adding this step! I've been making this for a few weeks for meal prep, and this incredible recipe takes me back to college in Philly.

@@solomonn2102when you deglaze you want to bring to a slight boil and basically get the stock and crispy bits all incorporated into a sauce. If the pan is clean and the sauce is thick enough to leave a trail when you move the spatula through it, it’s ready. You can just turn the heat to low and glaze the chicken in it at this point.

@@carlover4239 The standalone brick and mortar restaurants don't, but I've definitely gotten a platter in a styrofoam container from carts in the city (specifically thinking of the one that used to be right near all of the NYU bars). That was nearly 10 years ago though, so maybe they've updated the carts to use the aluminum/plastic containers as well.

For the rice, soak it 20 minutes prior to cooking. In the pan, put in the bay leaves first, toast it, then the onions, let them brown a bit and then put in the rice, toast them for a bit and then add the spices and broth. You'll get a much better result, trust me

I didn’t realize how much of an Ethan fanboy I was until a few weeks ago my Mom was talking about trying to make some recipe and I recommended one of Ethan’s. We brought up the KZbin channel and searched for the video and as I started scrolling through I was shocked as I mentioned in conversation, I made that recipe, and that one, and Ethan taught me a great technique you should see in that one…. And wow. I not only watch but put into practice almost every recipe and kitchen hack you’ve introduced to me for years! @@Hellamoody The Halal Guys they have where I live is terrible, unfortunately. Crunchy, undercooked, flavorless PARBOILED rice! The chicken just tasted like it was not marinated the usual way. It tasted like warmed up cooked chicken, with a seasoning packet sprinkled on top. So disappointing. I’ll stick with the mom and pops or hit up the food trucks when I visit NYC again. Until then, I just try to replicate it at home. Way better than that franchise.

My wife and I used to get this dish from a real street cart at least once a week when we lived in Queens, NY. Since moving to AZ, we have not been able to find it at all. I made your recipe and it was almost like a wash of nostalgia when I took my first bite. Nailed it! Will definitely be making it often. Im usually not the commenting type, but i just have to leave this here. You're by far the best home-cooking Channel ive been able to find! I've cooked plenty of your dishes and your website is a nice addition to all these videos you're making. The way you encurage people to cook (and clean at the right time ;D), is something different. I was already a kind of decent homecook but with your help ive been able to step up my game (as a college student, i might add here). There is just one thing i'd love to see in your videos more often. Calories. It would be great if you could do a calorie chart for your dishes. Or maybe some rough estimations. I mean: for this dish, i know whats up with the calories. 200g of chicken: ~ 220 cal 100g of rice with table spoon of butter: 450 cal All in all with salad and tomatoes: ~465 cal (without sauce) White sauce: - 100g Mayo : 630-700cal (depending on the brand you're using) -50g of greek yoghurt: ~25 cal - Vinegar: not sure. But id say -10-25 cal Water: 0cal Total: ~700 cal Red sauce: id just guess at that point and say 100 cal for that bottle? I think it would be a nice addition, because a lot of people, just like me, are getting into homecooking to eat healthy/loose weight etc. A cal chart or some rough estimation for a portion shown, would have helped me at the start and would help a lot of others, i suppose. Anyways: keep up the good work! I really aprechiate all the good videos and the inspiration i can take off of them. :) PS: doing that Chicken and rice dish tonight. Looks delicious and its not common where i live. So i've never had something like it. :)

I've made this several times during the pandemic, one of my favorites to make ever! For the rice, I do all of that and then transfer it into my rice cooker so I don't burn the rice or get it stuck to the pan. Also, Sriracha is a perfect replacement if you don't want to make your own hot sauce. That meat marinade also works really well with beef too!

I was really tired yesterday and looked for an easy chicken and rice inspiration and I found this recipe! The white sauce was a great cooling sauce for spicy chicken! I made the yellow rice in my rice cooker and threw in a chopped 1/2 orange bell pepper, a large jalapeno as well as a handful of kale and baby spinach combo towards the end of the cooktime. I used frozen marinated chicken inspired by your meal prep videos! So thank you twice!! I'm a home cook who usually has the time but not always the energy.

Just made this tonight and it was amaaaaaazing. I added a chili to the hot sauce to thicken it up a bit, but otherwise was fairly by the book. The butter in that rice makes a crazy difference to the flavor. Probably the thing I appreciate the most about this dish is how achievable it is: you can buy everything from a standard grocery store, you don't need any special equipment, and it's not too intensive to cook

Looks great! Something I also really like doing with this style of dish is chopping up the chicken thighs beforehand into really small, almost doner-sized pieces - that way you get a lot of surface area for the spices + browning to really pack a punch flavour wise... it is a bit more of a hassle though

Me too. I find their white sauce a bit too sweet so I reduce the amount of sugar around half. They don’t have a recipe for red sauce so I use this and it goes perfect. 24 small dry red chiles, Soaked in Boiling Water, Drained and Seeded 6 Tbsp Reserved Water from Soaking Chiles 6 clove Garlic 1 1/2 Tbsp Olive Oil 2 tsp Vinegar 2 tsp Ground Caraway 2 tsp Ground Coriander 2 tsp Paprika 1 tsp Ground Cumin 1 tsp Salt Blend all.

Perfect anabolic dish, Ethan! I prepare something very similar, first sautee vegetables, add in the rice, maybe some white wine. Put everything in the oven with some chicken thighs and cover with a lot of broth after that bake.

Just a tip: Mariante the chicken in yoghurt over night, instead of using mayo. Its very common in the middle east and india/pakistan area to marinate chicken in yoghurt. Also some thin sliced white or red onion goes great with the lettuce and tomatoes.

Just wanted to thank you for your simple and delicious recipe, Big Chlebowski. I've been trying to learn to cook for years but the ridiculous ingredient list, overcareful recipes and mediocre results always made it unsatisfying. Now i'm cooking confidently and learning methods, instead of recipes one at a time. It's even possible to take parts of some of your recipes and mix them with others and it still slaps. A few pro tips from someone that has made a variation of this recipe a million times: -Cooking the chicken by putting it under the broiler for 7-10 minutes makes this the easiest recipe ever -The chicken also makes a damn good chicken sandwich with the same accoutrements of lettuce and tomato on a brioche bun -Can’t overdo the lemon or coriander in this. Those are the stars of the show. Lemon zest makes it even better

When I worked in Boston I was 100% addicted to Chicken and Rice Guys and I’ve never gotten a satisfactory recipe. But this looks ON POINT and I can’t wait to try it.

Also though we know what our boy Ethan means by halal style lots of people commenting on it...just for the record Halal means permissible. Specifically in the context of food: it means food that is permissible for Muslims. It’s more than just no pork and no alcohol. But it goes into the ethically treating an animal, and specifically method of slaughter the animal as well. Way more details of course, go read up on it from a Muslim source please...since yeah it our topic of expertise. Consider HFSAA (if I put a link, comment likely will get auto blocked)

Ok I’m from ny and I’ve been going into the city for the original halal guys for over 15 years so I have a few things to say! 1. This definitely looks like way better food than what we get there. It’s practically shredded chicken from the cart. 2. Man you gotta hit that white sauce harder, no shame! 3. Nothing will compare to the original. Even the cart itself, nothing will beat going there after a few drinks with my friends in the summer after a concert or just a long day. That experience was some of the best days of my life! Thanks for getting this recipe out there, and you can bet that I’ll be trying your recipe out!

Some quick advice, if you are cooking the chicken in a non-stick pan, DO NOT chop up the chicken in the pan, unless you want to ruin the Teflon

Just made this one, but used about 3.5 lbs of chicken breast. I essentially tripled the chicken recipe and doubled the rice recipe. Gotta say, it absolutely SLAPS. I'm really looking forward to a few days worth of leftovers. Salting the chicken at least a few hours prior is key... it brines the chicken, which is essential for breast meat. I grilled my chicken, and the mayo marinade was perfect on the grill. The sauces just bring it all home. The rice was killer. I'll making this again and again. Nice work, Ethan.

Kenji didn’t invent this (nor does he claim to) and this is just the common recipe used by New Yorkers for years now trying to replicate halal kart food. Not to mention a lot of this is just vaguely middle eastern/south Asian cooking in general. Why be so passive aggressive over something Kenji has no real ownership over?

You're right Kenji didn't invent this, and I'm not sure if Kenji came up with his own recipe or not. It's why I left it open ended because I didn't feel like comparing the two recipes. I've seen him attribute to Kenji before but was wondering why he didn't this time: The fact that he would attribute is something I respect about him as opposed to Adam Ragusea.

I made this for dinner last night and it turned out really well. There was so much flavor. The white sauce was really good. I must admit, I'm not used to measuring in grams, but I think I did ok. My family loved the dish. Thank you for sharing!

@@adamkhan7234 Because it disconnects from the meaning of the word. This is a middle eastern type of dish, could be served in Arab countries, Turkey, Israel, Cyprus, Greece... Halal just means in agreement with Islamic dietary laws. Even sushi can be Halal...

But the main thing in this channel is the food, not a religious reference point, and some people are gonna learn something about halal from all the yt comments on this vid and that wouldn't have happened without the vid title, so I'm not mad about it.
