@@nozrep dude's a world champion barista and is the co founder of the Square Miles coffee company and Brewed by Hand. He also does counseling for other companies if I recall correctly. What I absolutely love about this guy is his surprisingly and impressively deep commitment to being objective and remaining absolutely unbiased regarding... Well anything really. He does triangle test instead of A B because there's variation in everything - and you have to really beat the odds consistently to really confirm there's a difference (or what it is). He absolutely does not involve his own company or anyone he is affiliated with in tests - and he usually states so (or on the occasion he is showing something off he immediately mentions his affiliation). This kind of clarity and sense of humility I get from him is something I absolutely adore. He is one of the foremost experts in his field - but he just presents as some guy who loves coffee. I think it would be fitting for him to do an explanatory video about his own products, talking about the intent behind products and what you can expect from the services of his affiliated buisness - but I do think he is correct in refraining from injecting his own buisness into other videos, a kind of restraint and appreciation for the average consumer not many have. It's also really fun to listen to him nerd out about this stuff.

One of our baristas once came up with a signature "beverage" of a double espresso of a lightly roasted honey-processed Costa Rican coffee, a slice of a very particular parmesan cheese, and a small dish of a strong floral honey... Honestly the whole thing was genuinely delicious, probably because the three elements were all quite strong and happened to have quite complementary flavours.

In Finland there is a coffee-cheese pairing that is actually works! Bits of a roasted fresh cheese called leipäjuusto (a direct translation would be bread cheese, people like to call it squeaky cheese because, well, it’s squeaky) are softened up in coffee so they become soft, warm and taste a bit like coffee. It sounds a bit suspicious but it’s quite pleasant and tasty!

There is an American “Artisan” cheese manufacturer called Sartori. They have a range of cheeses called Bell Vitano, and one of them is Espresso-Crusted. As someone whose blood type is Cheese +, I was extremely dubious. It’s actually amazing. (Quite a sharp cheese. No sweeties and not wet.)

For anyone interested, it’s BellaVitano and it’s from Wisconsin. There have a whole line, including Balsamic, Merlot, Raspberry - which I have tried and they were all delicious Black Pepper and Chai - which I have yet to try. BellaVitano is inspired by traditional parmesan cheese so expect something closer to Parmesan, but oooh so nice. Espresso is still my favourite.

In Minas Gerais (Brazil), we typically drink coffee with cheese or pão-de-queijo (cheese bread) in the afternoon. It is usually paired with Minas cheese (a milder Comté-style cheese with no crust) and honestly the pairing is absolutely great. The cheese is not overpowering, so the delicate acid and savory notes compliment certain filter-style roasts really well. In fact, in São Paulo there is a café called Coffee Lab where they make some coffee tasting experiments, one of which is pairing a cup of a light roasted fruity Brazilian coffee in a v60 with both chocolate and Minas cheese. The extent to which the cheese pumps up the flavor and aroma of the coffee is seriously astonishing.

In Finland we have something called leipäjuusto, leipä=bread juusto=cheese, it is very mild. It is made by making the cheese curd, draining it and then flattening it on a board in a circular blob and then roasting it on a open fire. Most commonly it is served as is with cloudberry jam, but there are couple other ways to prepare it, one being cut into small cubes and put into coffee. The coffee can be sweetened and have a bit of milk in it, the coffee is drank first and then the leipäjuusto is eaten. Leipäjuusto does not melt, it softens. I have heard leipäjuusto be called squeaky cheese, because it squeaks when chewed. just a side note leipäjuusto is not same as juustoleipä, juustoleipä is bread with cheese on top of it or a cheese sandwich.

I believe that tiramisu is technically coffee and cheese. But if I want *cheese* with a hint of coffee flavor I'd go for Cahill's Irish Porter Cheddar. It gets plenty of roasty flavor from the dark beer, and the un-colored curds give it such a wonderful look, too.

I think about 2 years ago Sorted Food did a video about weird food combinations and one of them was "A strong parmesan (or other strong cheese) with honey and ground coffee" And I think they tried it out with both instant and ground coffee and it kind of worked. They even tried it with a roasted coffee bean - maybe it's a combination of sweet, salty, and bitter along with different textures...?

There is indeed a Northern Finnish-Swedish tradition of serving cheese in coffee. It's kind of, well, utterly weird: squeaky bits of cheese floating around in your coffee (roasted and served, as northern tradition has it, utterly pitch black), with the added, eh, benefit of an oily tint in your cup. It is not so much a grande, celebratory tradition but rather a way of, no matter your fortune, making sure you always had something somewhat luxurious (read: fat, creamy) to serve alongside, or here indeed inside, a cup of coffee, should a guest ever happen upon your farm. The modern take is to simply eat the cheese separately as if a piece of cake, with some cloudberry jam, alongside a cup of very black coffee. I heartily recommend you try it out!

Coffee and cheese can be a thing. I think it was Jamie Oliver on one of his shows suggested a piece of strong cheese like mature cheddar, a little blob of honey, and a sprinkling of smashed roasted coffee beans. I thought it was a weird idea, and so I had to try it. It was pretty interesting, in a good way. You have to be up for the idea of eating coffee beans, which isn't for everyone. But that was something that's enjoyable because it's surprising and fresh. There would be no way to package that.

I have a French knife just like that and I would have never thought it was intended to be a cheese knife. This video is delightful all around. Probably wasn’t delightful to make it, but this is absolutely peak James Hoffmann.

It's just a french pocket knife from the Opinel brand. Not intended to be a cheese knife really, but it is used a lot in the context of food because it's a french knife and the aesthetics and heritage give it that gourmet feel.

Weird comment to make on this video of all of your videos, but I just wanted to state my gratitude for your content in general. I've had my opinions and passions about coffee for a very long time, but I've been somewhat aimless in my pursuits in making better coffee. Not to say I follow your directions to a T, but I appreciate that the way you formulate your instructions and opinions are done both personally and well explained. I know that this information could have simply been studied, but as someone who has never made coffee professionally in any capacity, and is simply someone who lends towards enjoying things with a fine tooth comb, you've hit a wonderful spot of entertainment and direction for me, and obviously a lot of other people. Basically thank you for not telling me what to think, but giving me the tools on my journey to understanding better what I want from my coffee. Also I will never not be jealous of your hair, just fantastic.

This reminded me of a truly delicious dessert from "The Classic Italian Cookbook" by Marcella Hazan. A scoop of vanilla ice cream, 2 tablespoons of scotch on top, and a couple teaspoons of *very* finely ground coffee beans sprinkled over everything. It sounds absurd, but the contrast between the cold, sweet, creamy ice cream, the zing of the Scotch, and the gritty bitterness of the coffee is simply wonderful. If you ever try it, James, let us know what you think.

Finnish "coffee cheese" is a sweet, browned farmer's cheese, kind of very firm mozzarella-ish texture. It's not aged or overly savory. Gives a creaminess to coffee. Not my favorite, but some people swear by it. Sweden probably has the same thing. Oh, and it squeaks as you chew it, therefore familiarly called "narskujuusto", something close to "squeaky cheese" in English.

In Brazil is actually common to pair coffee with cheese. Usually it's a raw milk cheese, which brings a lactic taste to the coffee. There's a region (Minas Gerais) that is famous for its coffee and cheese production, i think the idea came from there.

There is a cheesemaker Sartori in Wisconsin, who also has a line "BelleVitano" with cheddar made with Red Wine, or Espresso and other things. I had fears to try it, but the one with Bourbon in it is very good. It is also not a wet cheese, it's just great.

The one coffee and cheese combo example I can think of is having coffee with one's dessert, when one's dessert is a cheesecake. And yes, I am distinctly aware that the intent is not to combine the flavours, but contrast them, and further, cheesecake is quite far from being something one might reasonably call cheese, but that's the closest I can get.

There's a local speciality food shop near me that sells, espresso cheese...that's actually really good. The rind is rolled in ground espresso. I don't remember what the base cheese offhand but it's a mild cow's milk. The espresso just adds a hint of flavor, without screaming COFFEE. And it's not at all sweet...This on the other hand sounds horrifying.

Here in Québec, Canada, we got English cheese for Easter last year, I have never been more afraid of cheese. There was a chocolate one and a lemon-flavoured cheese.
