When we take the limit as 'delta V' tends to zero, 'x', 'y' and 'z' also tend to zero. Therefore the value for 'p(x,y,z+dz/2) - p(x,y,z-dz/2)' is so tiny that we can define it as 'delta z'. I hope this answers your question :)

When you say the half (1/2), do you mean the coordinates of the outer boundaries of the volume of fluid? If so, considering the vertical forces section, the centre of the volume of fluid has a vertical coordinate of 'z'. As the volume of fluid has a depth of 'dz', the upper surface of the fluid is a height of 'dz/2' above the centre of the fluid, hence the upper surface has a vertical coordinate of 'z + dz/2'.
