The production quality of your content is amazing! The B-roll, interviews, lighting, sound, simply the whole thing. I’ve lived in china for 8 years and happen to co-owned two restaurants in Shenzhen. I’m an investor not a chef but throughout my experience just dipping my toes into the F&B I gained tremendous respect for people in this industry specially Chinese chefs. I find it amazing that you cultivated this relationships with the owners for years and yet you were able to distill it into a video that's barely eight minutes long. Excellent work! In both content and presentation in reminds me of Anthony Bourdain visiting a duck farm processing facility in Canada that produces foie gras.

Lived in Shanghai for 9 years. This place (莱莱) is hands down the best for crab soup dumplings (蟹粉小笼包). They’ve got seasonal ones that have no pork, just pure crab (male 纯蟹膏or female 纯蟹粉) goodness. It’s so good even Roger Federer was pictured waiting in line during his visit of the city.

I remembered when the hairy crab exploded in the CA delta in the late 90’s and now years later they’ve all disappeared! Now the CA delta has the golden mussel spreading now.

Hairy crab season is a big deal in Shanghai! When you buy the live crabs from farms, my parents tell me the real deal are all bar-coded and QR-codes.

there is a ton of fakery, very well-documented in the chinese media, and very sophisticated. it's an expensive product, so not surprising really... the counterfeiters are always outrunning the vendors and figuring out new ways to pass off average crabs as the expensive ones from the expensive, famous lakes.
