I have only watched quarterway but that explains so much. I do see myself as an addiction resistant person when it comes to food, and have been raised on my italian moms cooking. Coincidence? Perhaps, but I like this explanation more.

I was pleasantly surprised with the availability of fresh, tasty food at many neighbourhood stores when we recently visited London. To your point about the difficulty to find affordable good food in the US, I quickly took to stopping at M&S, Sainsbury, or Tessco on my way back to our room at the end of every day. Super convenient and makes the need for extended shelf life less an issue. Also, fresh fruits and vegetables where I live in the US are more expensive than heavily processed ready-to-eat foods. The mindset matters but the budget constraints are real.

Wow! The idea that uncertainty drives addiction, and so food additives lead to more addictive behaviour is mind-blowing. Soph, I wonder what you'd think of some of these new medications which help both with weight loss but also appear to help drug addicts?

I love food. I. _Love._ Food. Flavor is _everything._ Beef, poultry, fish, vegetables, fruits, grains, nuts, milk, sugar, fat, healthy, unhealthy... I love it all. While I don't like every single food, the only general turnoffs that I have are certain foods with a very pungent smell (like asparagus) or slimy foods. (Ugh.) Texture of food is important. I _am_ one of those people who can sit and eat a meal for an hour while casually chatting while everyone else was finished thirty to forty minutes ago. I can enjoy a flavorful mixed salad as much as a tender steak or a candy bar. Forget calories or weight. For as long as I can, I will eat and live full, fat (slightly) and happy!

I've grown up in Australia with Italian parents. I've visited Italy 3 times (damn long trip!) Yes, food is beyond important. However you don't see so many overweight people (except for tourists 🤷🏻♀️). Even my parents, every meal has a first, main, salad/fruit. However their portions are smaller and they take their time eating. I've gotten used to bigger portions and wolfing things down as normal. (Also, last time I was in Italy, it seemed as if you'd meet a guy, 1st he asks your name, 2nd he asks if you cook😅 yet they cooked better than me!)

Mindfulness/meditation training often includes eating a single raisin, but to eat it while beining mindful about it. It tastes better. It would take a handful of raisins to get the same effect, save for the massive insulin spike.

tasty information :) just read the UPF people book you've referenced, it was very eye-opening. since i've read the book, i've made a conscious effort to turn to healthier desserts made from scratch, such as dark chocolate, dates, fruits, yoghurt, and really experimenting with turning those items into something delicious. after just 1 month of this, i've discovered that not only can i eat more dessert for the same calories i would previously consume a small serving of UPF dessert, i also can't stand the UPF desserts anymore! they are absolutely flavourless, which is something chris van tulleken talks about in his book. once you start analysing UPF food, you realise just how bland and lacking in flavour profile it is.

All those biscuits would usually make me crave biscuits, but I've managed to get in to (and mostly stay in) a frame of mind that's allowed me to lose 3.5 stone (22.2kg) since May. And perhaps surprisingly, there's plenty of frozen veg, potato waffles, and process crumbed chicken in that diet. I figured that if I gave myself elements of what I craved it'd stop me reaching for Just Eat, and it's done a good job so far. My big things are balanced (carbs, proteins, fats, etc) though I've not been paying much attention to my vitamins - I don't have rickets yet. I'm taking in roughly 1300kcal a day, and once or twice every two weeks I'll have a "normal" day where I can eat anything and everything. For me, I can control my hunger and weight with determination, but it's definitely not the easiest thing. My favourite additive is aspartame and my favourite food is anything with sugar, the more the better. That's why there's only aspartame in my house right now 😂

I have noticed the same thing with salt. If I cook pasta with less salt, I tend to shovel in more of it. So making it tasty probably doesn't make it less healthy.

Having been raised with Italian family, I can confirm the food is tasty, and often carbs smothered in fats. Interestingly though, I've found my own experiences to run kind of opposite to the second half of the video. When food was a focus, it was too easy to indulge. You want that good feeling, the satiation and satisfaction and social connection. As soon as I made food a chore: precisely measured, consumed, cleaned-up-after, and moved-on-from, it wasn't a temptation anymore. It was a small task in the day that required completion, not meant to be enjoyed or dwelled upon. Does that mean I never enjoy food? Not at all. It just means, for me, a "standard meal" (eg. not a social event, a special choice, etc.) has little-to-no expectation of any kind of anything, and that's made it something that is hard to crave, because it's nothing at all. One case doesn't make proof, but I feel like fully de-romanticizing it _can_ be helpful for some people, even if they're statistically outliers.

I realize I'm uh...probably nowhere near neurotypical, so what is good for me is probably only good for a tiny subset of people. I've never seen a book/movie/tv-show talking about food from the perspective of someone on the neurodivergent ends of the spectrum, so I figured I'd toss my two cents in.

Fascinating stuff. I'd be interested to know about how golden rice has affected the populations it was made for - iirc, it was created for communities in poor countries whose vitamin A deficiency was causing blindness. Do we see the same effects there as the American pellagra belt? Also my favorite food (or at least biggest comfort food) is mac and cheese, or cheese in general. The portion about cheese consumption really spoke to me. :)
