I had the same issue with that last crab. I found it faster only because I went back up the tower to grab a chest and there he was.

In case you never found it try looking in the tower to your right as you enter the castle … you need to climb the wall

Welp I knew this game was a fantasy b/c any place that has large crabs as a problem and not a wonderful food source that everyone would be high fiving over can't be real LOL. I wouldn't be killing them, I'd be roasting them and living my best fat boy life!
