What does the mask at 0:34 do?

They were climbing without supplemental oxygen. So the mask brings in the cold air and it mixes with the warm air you exhale that way your next breathe isnt filled with completely frigid air which can damage your lungs and lead to respiratory issues referring to little blue mask they wear on the mountain. The one in the dr studio measures many things depending on test for example vo2 max.
