I heard technology mentioned which I’m not comfortable hearing when it comes to food. Please explain.

Technology is used in almost all food production. anything that isn’t hand picked and put right on your plate involves technology. tools are technology. Using modern tools to create foods is nothing new. In this case these food makers are able to use technology to “map out” the textural grain of a cut of steak and layer the proteins up that way.
