Their father worked as a driver and couple years later the sons bought it, a Mexican kids dream to do for their parents. I hope they keep going strong! When I go this Saturday to visit New York I’ll make sure to buy their products !

Rick Martinez from Bon Appetit. You may talk a lot of smack about machine made tortillas but this is what a real American made tortilla is like. Fresh, custom made to a chef's specifications, and from a company run by professionals.

Exactly, this is how it is made, no different than with store bought maseca from the supermarket, except it has time to sour for a day or two on the plastic. It's like using canned tuna for sushi, sure it works, but it tastes very bad compared to real fresh ground corn. The problem with tortillas is scale, you can't really scale, so fresh nixtamal you will only find in mom and pop tortillerias or restaurants, which mostly don't exist in the US, or they used processed flour like this place. Even grabbing the tortillas fresh of the machine will be very inferior to fresh ground.

Also: No covering of the mouth; there's hair coming through the head-covers; no hygienic clothing (just their own regular clothes?)... Brrr... Maybe it is a cultural thing?

Barrios need a QC manager because all I see are a bunch of people handling fresh tortillas with no gloves and wearing rings, I'm like wtf they get health inspector in their and they'll get shut down faster than a taco gets soggy. not to mention the way they move fresh produce with other products that shouldn't be close in the vicinity.
