I've actually tried it out before as a Str/Fth build with these tools: Crucible Horns - Shoulder Charge; Partisan Spear w/ Spectral Lance AoW - Throwing Spear; Battle Hammer w/ Lion's Claw - Shao's Outworld Hammer + Shao's Lunge attack from MK11. These are pretty much all of the things you can do to make a Shao Kahn build, which is more suited towards a PVP video, rather than a full on playthrough I feel like My point is I don't feel like it would make for an entertaining video, sadly

Elden Ring is quite a flexible game, I'd say that it's possible to recreate almost any character But I've had very limited exposure to anime, and because of that, I'm very hesitant to touch cosplay runs on anime characters
