I was very impressed how well the thermostat worked on this, I used a digital thermometer to monitor it on my first cook just to be sure.

Obviously something is wrong. Have you contacted Masterbuilt to trouble shoot? www.masterbuilt.com/pages/customer-support

Hey man I just had this same issue. Flip it upside down undo the flame sensor wire and leave it for about 5 minutes then when you tighten it back in you need to tighten it past the point that you think it should be lol I mean reeeallly tighten it down until you can’t see any threading. Masterbuilt unfortunately was no help in figuring this out

Hi! Just finished setting up mine. I think the thermostat wire has to go behind the two metal pieces that were attached to the back part.

You are correct. The unit I got was missing those parts. I called Masterbuilt customer service and they send the parts to me within a reasobable time, but not before I shot this video.

How do you keep the flame on without holding the control valve. Literally holding in in. I've been trying to use this smoker for 3 months. No luck. Three repair calls. No one can figure out what's wrong.

Well something is definitely wrong. We didn't have any problems with ignition. Have you tried using a different LP tank? If it's not the LP tank, then it's Masterbuilt's responsibility to make this right. Where did you purchase this?

Well fellas I did my first smoke on fathers day. The unit did what he was suppose to do as design, however, I was not impressed with the amount of smoke I was getting from the chip pan and found my self adding chips continuously because of the quick burn off and had to use a spoon to scoop out the burnt chips that no longer was producing smoke. This is the only Con I could really find. The temp dropped to 40 that night on my boston butt, temp held up nice for my 16 hour smoke and it produced some of the best ribs I have made. I would appreciate any help with chip smoke management advice

Ah ha! Don't be fooled by visible smoke! The best tasting smoke is called blue smoke because it is invisible because the particulates are too small to refract light! Billowing white smoke is less desirable! Chips burn up fast. Use wood chunks instead. They last longer and produce more smoke.

i will try it but the manufacturer stated that it was designed for chips only..

You don't really want a visible (dirty) smoke.

So, you can open the lower door to add chips, but you have to open the top (main) door to added something to the water tray? Is that correct?
@AmazingRibs

Correct.

Just bought this yesterday. The rack that holds the water tray can slide outward so you can grab the water tray. This can be done from the bottom door. You don't NEED to open the top door to add water.

I have this smoker and have used it several times. I’m having issues getting good smoke from it I previously just used my Webber grill and the Snake method. I didn’t have problems with smoke. How often should I be adding wood chips ? I have been adding them every 45 minutes or so. Any advice would be great. I’m sure it’s something I’m doing wrong. Just not sure what. Tried dry chips , wet chips , more , less. Just not getting good smoke penetration.

Do you think you would be able to smoke cheese in this by adding ice to water tray?
@AmazingRibs

Thermotemp has a range of 175° to 350°F so you can dial it down to cold smoking temps. However, for health reasons, we do not recommend cooking temps lower than 200°F. Although the risks when cold smoking cheese are much lower than cold smoking meats and fish, the potential health hazards are still present. Please read our article about cold smoking - amazingribs.com/more-technique-and-science/safety-and-health/cold-smoking-meats-dont-do-it

The response above was from Max, our grill tester and maker of the video. This is Meathead, the cook on the team. Our general warnings on cold sm oking are more about meat. Cheese is much less risky.

Sorry for the conflicting info. Max says it goes to 175, that's a nice low temp, and with an ice pan you should be fine. - Meathead
