I am just beginning the smoking experience and you have really helped in all my decision making. Your final comment sounds just like me. We need experiences in life in this chaotic world that just makes you feel good, and sitting outside , watching the dogs play, sipping on a bourbon, or drinking a beer, and listening to the blues while the smoking is cranking out those wonderful smells is what it is all about. Dude... This is by far my favorite video! Your honesty and just plain being authentic is a testament to BBQ mastership! I have made many of those mistakes but you do learn along the way and correct these things. I made your fire roasted salsa video you did, a month ago and wayyyyy over powered it with too much seasoning. I assured the wife (who is Mexican and knows her salsa) I could correct my error. I seasoned it little by little, to taste and by my third try was making salsa she claims is better than her grandmothers! Great video and authentic to the core!

As a 46 year resident in the KC Metro, I really get and understand your 5 points...I haven't F'ed up too many times, but when I do, it hurts! Loved the advice on seasonings, and relaxing during the process. It's such a joy to produce great smoked meat! BBQ is such a huge tradition here that when you can provide something for your family that makes their eyes roll back in their head...well, it's one of the best feelings in the world!

It about being outside, forgetting the grind of daily activities and lighting up that pit, smelling our favorite wood burning, hearing the sizzle when we flop that piece of meat on, cracking open our favorite beverage, grabbing the little ones for a game of horse shoes, seeing that smoke come from the smoke stack knowing something special is happening inside, conversing with friends and loved ones young and old around the pit, swapping stories, then sharing an authentic moment around something so great as a shared meal cooked outdoors the way it was intended

I love your video, thank you. I have been there and done that. Now I use a Masterbuilt Pro Dual Fuel Smoker (Charcoal and Propane ) I use Yellow Mustard, then rub my Ribs with Sea Salt, Pepper & Brown Sugar. After the smoker stabilizes @ 225°F, I add soaked Apple Wood chips to the chip pan, then put 2 full slabs of ribs cut in half, to fit the 4 racks into my smoker. I rotate the ribs every 45 minuets during the first 3 hours of 6 hour low & slow cooking. Then I wrap the ribs in foil, with apple juice & smoke them for 2 hours. Then I unwrap them brush with Sweet Baby Ray's BBQ sauce, and smoke them for the last Hour.

Been smoking for 38 years. Thousands of pounds of product. Your examples are spot on in the grand scheme of things. Most importantly is ENJOY the cook. Make a day of it. My backyard is full of things to "play" with to help it along. Shooting bows, pellet gun range, cornhole, etc. Oh and of course a full cooler.

I love this video so much. I've been smoking butts with an indirect charcoal grill that my wife surprised me with for Christmas for about a year now. And there is definitely some therapy to it. I fire my coals outside of the grill and I only fire about 15 coals. I put them in the bottom of the grill and then throw some wood chunks on it. I put the actual grill grate on, but I have it wrapped in foil. Then I put the butt on the top rack. Once the smoke starts rolling I sit back relax, drink a beer, play with my kid, its a great time. I treasure those days.

Why I love watching Ry's videos is that he always tells you the truth, like when he made a mistake or overcooked someone. Most other videos the guy always tells you how great their meat came out, no matter what. Even if you've been BBQing for decades, you can still screw up. It by no means a perfect science.

I love videos like this. I just finished smoking a turkey I brined for 24 hours on my PK grill. That bird smoked for 7 hours straight lol it came out sooooo good!! I agree, it's all about the experience for me. I approach smoking meats the same way I do gardening. It requires patience. you have to "let it grow" until it's ripe for the pickin'. There is a perfect time to harvest a tomato, and the same applies to cooking times and cooking methods when it comes to meat.

I think I watched this video well over a year ago when I started to get interested in low and slow cooking. Your advice was invaluable. Of course it didn't stop me from making a lot of mistakes. Since that time, I have cooked a lot (4 or 5 times a week) and have watched a lot your videos. I think what I enjoy even more than some of your great and sometimes strange recipes is your obvious intelligence and gentle sense of humor. You're absolutely right about over seasoning. I've gotten rid of all my store bought rubs and infused spices. Other than my pastrami rub (which has many uses outside of smoking), I only put peppercorns and garlic powder in my nutri-bullet. After salting the meat, I add just enough pepper and garlic powder blend (I don't even call it a dry rub anymore). I want the smoke to stick to the meat, not the dry rub. Once you ditch dry rubs, the types of wood chips start to matter to you more than anything else.

Thanks for #1...I'm on some forums, and time and again, everyone argues about "when should I pull the brisket and wrap it? What's the best wood to use?" blah blah...I've done so many smokes now that when I do brisket, I take more time prepping the meat the night before than I actually do the day I smoke it...once you learn your smoker and how it works in terms of what wood it takes, how long it takes to get a mature fire, etc...this gets really nice and leisurely! Love this vid!

Thank you for your video on how to make it simple. I have a Oklahoma Joes Highlander for about a year. I have done ribs, roast, and chicken wings. This weekend I did a whole turkey. It turned out good, but took a longer time due not able to keep heat up. Chicken wings and ribs turn out too rich; over smoked. Learned to smoke half time then cover like you did your ribs. Being in the high desert of Calif sometimes wind made things difficult. Your videos have given me more tips and techniques to control smoker. Thank you.

Thanks, Ry! My wife and I have progressed from a ceramic kettle smoker to an offset stick burner ( Oklahoma Joe Longhorn), and the growing pains are real. We’ve modded it, sealed it, added an extra thermometer, and are just getting down to understanding what makes it tick. We’ve made many of the mistakes you’ve outlined, and have had more than a few fails (brisket still makes us nervous!). For me, success comes down to one thing - fire and temperature management - the rest are matters of taste and technique (seasoning, wrapping/not wrapping, etc), that are developed with repetition and practice. Thanks for your videos! Your earnestness and demeanour make you easy to watch!

I totally get liking to cook or bake outside. I do both a lot. I live a little over a half hour from the nearest one store town. Down a long dirt road. No visible neighbors. On a river… sorry about the sounds of rushing traffic, but I’m glad the cooking process helps tune it all out. I’m also off grid here. Solar and propane, and an outdoor wood oven to go with my 6 burner grill and a little vertical propane smoker. Cooking outdoors is super peaceful here. The views and the sounds and the smells… there’s nothing quite like it. I do all of my sourdough loaves outside and love making them. I make at least 20 loaves a week. Sometimes a little less but often a whole lot more Excellent video, btw.

Thanks for this video Ry! My journey through the world of smoke BEGAN in competition cooks!! The day after I retired, end of Dec. 2012, I attended a "fun" backyard contest mostly on WSM's. 2 weeks later I had my own 18.5" WSM and a BBQ Guru DigiQDX2 controller with a Pit Viper fan. This was the equipment my friend recommended back at Christmas when I said I wanted to smoke sausages, venison, etc. A few months later, same friend invited me to join his competition team. 2 years later I formed my own team. Let me digress for a moment-- I raced cars for a couple of seasons years ago, but the time crunch time of a 4 meat KCBS event was far more stressful than the starting grid of my first race!!!-- Fast forward to the present-- we have not competed for awhile, a rib cook-off set for late April has been postponed because of the quarantine. I have added a PBC, an UDS, built for me by my friend and teammate, a Santa Maria grill, and a Charbroil Big Easy fryer. I was told that pellet poopers didn't create enough smoke, then I heard about the Weber SmokeFire which got me interested in other pellet smokers. Now I am debating between the Camp Chef Woodwind WiFi, the new Cuisinart Woodcreek, and the Masterbuilt Gravity fed series. All of this was just to say how right on you are about not taking this too seriously- I started way too seriously, and now am enjoying the slower ride to smoke freedom and savoring the moments.

I've been smoking for WAY over 10 years, and as hard as I tried to figure out a point you missed, you nailed everything I would have said if I had tried to make a similar video. I've never had an electric smoker, so I have been primal charcoal the whole time, but I have thought about getting an electric smoker for a while. That said, I have realized that all the smoke you're going to get in a cut happens over a certain amount of time, and then you're just cooking. To that end, I will often smoke many cuts for however much time it takes to smoke it, and then move it inside to the electric oven to finish the cooking part. No shame in my game, and I'm getting hella good results. End of the day - Just because you start it on the smoker doesn't mean you have to end it on the smoker. Good food is the end game - not some purist BS. I have three kids and have been trying to teach them to cook - NOT just follow recipes, but cook. I see a recipe as a suggestion more than a directive, and never follow them to the letter. But, I know what my family likes and that's what I always shoot for. I've screwed up plenty of smokes and grills for over 20 years. Thankfully, I typically don't screw them up as much or often as I used to, but sometimes I really stretch my limits on something to see what my limits really are. If you're not screwing up every once in a while, you're not trying hard enough, and you're damn sure not learning anything. I'm just gonna leave that like it is.

#1 is the one that I think people who don't grill don't understand. I like to grill. I just have a Weber kettle and I've only been doing it about 2 years but I've learned so much. I watch several different KZbinrs and I take things from all of them. I laughed one day because nothing was going right. I mistimed everything and I was fighting my temps because I'm on South Texas and during the summer, getting the grill to maintain the temp I want when it's triple-digit heat outside can be challenging. Anyway, as I was cussing my grill, my roommate asked me, "And you think this is fun?" I laughed because even when things aren't going the way I want them to, I'm having fun. Plus, there's nothing like finishing a cook when everything finally comes together the way I want it to. I love it.

I just got a new Traeger Pro 22 after using two Masterbuilt electrics. You are so right, they are good smokers, I learned a lot using them and made some really good stuff. However, the Traeger takes it to a new level. The difference in the bark is amazing. As soon as I'm done smoking something, I want to do more. Thank you for taking the time to do your video.

We searched KZbin for a tutorial how to do it on a weber kettle grill. We came across a video you did, it turned out great been hooked ever since, for me bbq has always been about just shooting the breeze few drinks and some music in the background family and good friends. I've only just recently pulled off a brisket letting it rest now, it's been a rainy day where I am but smoking a brisket and listening to the rain has made this Sunday afternoon one to remember. Excellent video......If anyone ever says they have never smoked a piece of meat and havent messed up doesnt smoke. Example, 3 weeks ago, I did a rack of ribs.....I nailed the meat but tried a new rub...Pit Boss KC BBq rub......The rub ruined my ribs.....It was so salty.....Live and learn

I really appreciate this video. The number 1 reason is this is exactly how I feel when I'm cooking on my offset. Take your time, the smoke, the meat and having it all come together. I'm doing it for pretty much the same reasons. To have people enjoy it. Thanks. Greg.

Good vid RY. You hit the nail right on the head to enjoy what you like to do. Whether it's smoking, grilling, saute, braising etc, have fun with it and don't take it or yourself too seriously. I've been smoking food off and on since the early 80's and I still learn something new every single time, especially with my OK Joe's offset. Speaking of my offset smoker, it's still in the shed waiting for all the mud in my yard to dry up, lol. Soon, like this weekend I'll be back at it and having fun. Thanks for sharing your insight. Great video Ry! To your number 2 point...Time. I had to cook a 15lb brisket and then be at in-laws at 11:00 AM the next day to serve at 6:00 PM. Well, I started the brisket the night before at 7:00 PM, smoked until midnight, removed, wrapped and rested for 1 hour, place in the FRIDGE OVER NIGHT, took it to the in-laws the next day and put it in a 250 oven from 10:30 AM until 4:30 PM...let it rest in my cooler for 90 minutes. It was one of the best if not THE best brisket I've ever cooked...Bro-in-laws couldn't say enough good things. Long story, but you're right about the time thing and even if you have to "pause" the cook, it'll still work out...Just keep that thing wrapped! Thanks again and great content.

FANTASTIC video! I needed this after watching so many and worrying what I might do wrong. Tomorrow is my first go at it with a bullet smoker ( a work related gift). I will be smoking baby back ribs with apple wood. Thanks to you I plan to relax a little and enjoy the process instead of worrying about every step I know nothing about.

Great video. I've always used pellet smokers, and have been on the fence about investing in a larger one. After seeing this video, I think I'll try the offset and stretch myself to learn something new.

Hi Ry - I just discovered your channel and this is the first video I watched. I just started smoking a few days ago and truly love it. I appreciate the comments you made about enjoying the time and having fun with all the methods, etc. Several of my neighbors have been doing this for a while and they are extremely helpful. But your comments helped me realize I don't need to worry so much if the chops are dry and the ribs are a tiny bit under "fall off the bone". Thanks! Rob

So very true. I’ve been cooking most of my life. It has never been work. My specialty is Italian. I branched out to smoking, and am now enjoying it very much. I live just off the number 1 Tee box of a golf course. I have shared my BBQ with some fellow golfers. I’ve become somewhat proficient at it. It has now become a small business as i am cooking ribs and selling them. I’m having a blast.

Cooking With Ry , i have been asked by the head pro here to smoke brisket for an upcoming tournament. I’m a little nervous about it, I’m totally dependent on your videos. I’m to feed about 40 golfers. Thanks so much for your help. The 5 mistakes video is very instructive. I’m going to go to your brisket overnighted video and hope to learn what to do.

One of the things I do if things are going a bit slower than expected is to serve desert first. This is handy if the meat comes off the pit about the time people are expecting to eat but it still has to rest. Don't make the mistake of not letting it rest and don't bow to the pressure of others that want it cut up now. My general rule of thumb is work out the time you think it will take and add 2 hours. It gives you a bit of grace. A brisket will stay hot for hours wrapped in foil and towels in a good cooler. I use butcher paper so it's cooked brisket>butcher paper>foil>towels all in my cooler resting.

Love the talk about being held back by the electric smokers. That is where I am. Trying to convince the wife to upgrade to an off set smoker. Had a master built electric smoker for about 12 years. I love my Pit Boss electric but I found the pellets are to costly to smoke on it regularly. That's why I bought the offset.

I'm glad I came across this video. I just received my first electric smoker for Mother's Day and Memorial weekend was my first cook in it. I'm already addicted and learning so much from KZbin. I know mistake #1 I won't fall victim to because I'm already looking for offsets - maybe 2 yrs 😉.

I watched this video right before I did a smoked brisket for a gathering. The parts that stuck out to me and HELPED were the slow down and have patience and sitting out doors and just relaxing and enjoy. It all worked and the brisket came out perfect. We had none left over on a 14 pounder. Thanks bro!!!

Overseasoning is a big one. Franklin BBQ is recognized as some of the best BBQ in America. His brisket is just salt and pepper.

I have an offset and am looking to actually get a propane smoker. There are times where I do want to set it and forget it due to whatever reasons but I do enjoy kicking back with some beers, hanging out with friends and restocking the charcoal/chips when it's a casual day.

Ry I have to say these points are great. Number 1 really hit with me, i just did my first smoke 2 days ago and i was proud of it. I'm now looking at a smoker of my own. A friend is telling me to get an electric but there was just something fun and relaxing about running the offset.
