His stall reminds me of when I was a kid and there'd be this lady with a GIANT wok set up on the sidewalk half a block away from my house. She cooked and sold fried chicken and given that it was such a luxury at the time, I'd save my lunch money from school to buy from her stall. For a few precious minutes, it made me not feel like I was poor.

Couldn't read the names but the women on the fridge are probably enka (ballad) singers who visited the shop before or are from the neighborhood. Japanese shops and restaurants will almost always display proof that famous people visited, usually in the form of photos or autographs.

If you haven't had _menchi-katsu_ you must try it when you visit Japan. It has to be a blend of ground beef/pork and it tastes even better the day after it's been dropped into the deep fryer. Best with tonkatsu sauce or Kewpie mayo. I miss it so much!

Not quite, they use "katsuretsu" which basically translates to 'Cutlet' but means breaded meat more often than not. Different types have different names, Chicken is often just called 'Kastu' while pork is called Tonkatsu. 'Menchi' means Minced so Menchi-Katsu means 'Minced Cutlet'.

In addition the used German language also refers to a variety of "Schnitzel" as well, like "Hack-Schnitzel", "Putenschnitzel", "Schweineschnitzel", "Kalbsschnitzel", etc..

The final product looks nice and maybe is tasty... But sorry and please don't crucify me, because his kitchen does not look nice at all... I mean just look at the wall where the fryer is for example. It looks like ist has not been cleaned for at least 5 month or so. Not to mention the hot onions, that are put in the fridge right after beeing cooked on the floor... Ok I get it that his shop is not a 3 star restaurant, but there are hygienic standards that nearly everyone in the 1st world is capable of managing. Some spaces at his shop, should be at least steam cleaned to be honest.....
