I learned satellite communications in the military. I then used the GI Bill to get a IT business degree. About 10 years ago I got a contracting job with a cruise line. I went in with the understanding they could meet my diabetic dietary needs. The first cruise there was nothing I could eat in the Mess that wouldn't send my blood sugar up and I complained to deaf ears. Day 4 was a port day in Mexico and my blood sugar was 3 times thee maximum safe amount. I packed my stuff and flew home. They hit me with a lawsuit for breach of contract and I counter sued. My saving grace was that I took pictures of the food in the mess. I went back to oil rigs.

Reminds me of my old man, who was a captain in the mercent navy, telling me the two most important positions for an effiecnt vessel were the cheif engineer, to keep the ship running, and the chef to keep the crew happy. Sounds like the managemnt of some of the cruise lines could do with that message (suspect their budget for crew food was a bit better than the cruise lines).

Even as a passanger ive found it difficult to eat at the buffets on ships because I will ask if something has nuts in it and they have to go into the kitchen for everything and ask. There are some things that they say come from an outside source so they arent sure. So i appreciate that you advocate making sure things are marked well for the crew to avoid any allergy issues.

In my opinion would be good to have either the Executive Chef or the HR manager there to discuss this topic with them and get their prospective , i see a lot of people that follow your nice videos and want to learn more about the life there, but would be very good to have a complete picture of things, and as Myself being Exec Chef, I know that cater for so many nationalities at once is quiet challenging but agreed it is a broad and very important topic…

We did a behind the scenes tour on a different cruise line once, I remember them saying how much rice they serve in the crew mess. That make sense now, as I'm sure a lot of crew used that as their main food!

Recently found your channel. Appreciate your content. I worked for an Americant flagged small cruise ship line years ago. Your videos bring back a lot of good memories. I worked in the Galley for 3 years. We had 1 week menu cycle for the passengers. As for us employees, we got burned out on the passenger menu pretty quickly. So we would make tacos, pizzas, stir fry, etc just something different than the passenger menu so us employees would have variety. Oddly enough, Subway felt like a real treat after a week of fine dining. The Subway in Sitka Alaska is a place I always walked too 😂😂

Talking about our company... we don't give any bonus if the crew galley chef goes under budget. Quite the opposite, he will get trouble if the food is not according to the standard rotation and quality.

The worse thing is that sometimes cooks change the recipe and have any pacient to explain for the snack att or ass waiter, so sometimes we thought that we have some vegetarian option and they change puting some meet, with any advise. We always ask but sometimes they just ignore.

They will overcook the crap out of everything for safety reasons. When the food sits out for service then it's not on temperature control. Generally, food is safe for up to 4hrs providing it was well cooked to start with. To reduce the risk of food poisoning then everything is overcooked.

You are right..👍they are not feeding animals. They feeding people also same like in the guest. Give the crew a nice food and deliciou so they will not be streessful in the work while they talking about what will be there food in the mess again. It is so streessful for staff and crew if the food in the mess is not good and awful dishes..

Is there any kind of "Crew Kitchen" where you can cook your own? It seems like a great way for the crew to mix over meals from home nights, and party dishes etc. If there is no such thing; perhaps suggest it? I would be great to have the mess available when you don't want to cook, but when you want that taste of home... (edit;) Oh, extra question. Can you shop in the local markets in the places you stop, and bring local groceries and ingredients etc. back aboard the ship?

When I worked on ships, many moons ago, I had a theory that ship's mess dietary guidelines hadnt been updated since Captain Cook introduced lemons and limes, in about 1743 😁. All the food is unhealthy, like greasy, sugary, salty, rich, creamy - the UHT milk is always whole, never skimmed. But crew no longer shimmy up and down the rigging all day and swab the decks like in sailing ship days. Meat is always very fatty, and cooked in lard, like we all need 1000's of calories or summit. One ship that will remain nameless had no vegetables at all, apart from the odd green veg with your main meal - drenched in butter. We said it was like the Olympics - swimming in Greece, so that will tell you the date. They should recycle passenger food more (within food safety regs obvs). One day I saw a chef trying to stick a pineapple down the crusher, I asked where it was from, he said passenger display. Nowt wrong with it, so I said hey chop it up I'll have it! First decent bit of fruit I'd had in months. They must waste tons of good nutritous food like that, just on display, then bin. I always took chillies with me on a contract, you're gonna need them.

Also doesnt help that most of the cooks onboard are normally bottom of the barrel, no interview...here's a contract employees. Food is horrific, the pride in their work is non existant and 9 time outta 10 its the same food as yesterday just repackaged. My ships famous for having pasta and sauce one day and the next being 'meat with pasta and sauce' ..... still dont know what meat it is. this video is spot on, the bonus system should only apply to chief engineer and Captain for things like saving fuel and no delays.

This makes me mad. I bet they require staff to maintain a healthy body weight too. I'd be 300 lbs with those options even if I was exercising. They need to give people good healthy options and respect dietary restrictions. Now, if I go on a cruise, I'll feel bad for the crew. The bridge is manned 24/7 by members of the deck department , at sea, in port or at anchor. Usually you will have two officers, ( who are in charge of safe navigation of the ship) a Cadet (trainee Officer) then a couple of ratings who act as lookout or steer if required. This bridge team will work 4hrs on watch then have 8hrs off watch. When not on the bridge they will have other duties around the ship to perform such as running the tenders, safety inspections and maintenance. Other members of the deck department include The Captain, staff Captain and Safety Officer, all who have been junior watch keeping officers at some time.
