one thing i know about biryani is not to use aromatic basmati rice because it overwhelms all the other fragrance and one very important aspect of making chicken biryani is to soak the chicken overnight in salt water and put in the fridge so what that does is, it makes the chicken succulent and the salt makes sure it’s not bland from inside. In Nepal they have little different way of eating masala as we do not appreciate whole spices in our food so the biryani joint has to make sure not to do that and use clothe and put all the whole spices in it and discard it later when cooked. Don’t forget to use kaura water and nutmeg powder. Use hung curd for best result.
