The most delicious homemade Milanese Panettone

Ingredients: (makes 2)
Poolish:
1 cup water
1 cup pizza flour (or T45 or 'OO' flour)
20g yeast
1tsp sugar
2nd dough:
570g pizza flour (or T45 or 'OO' flour)
85g custard powder
6 eggs
125g butter, softened
155g icing sugar
3rd dough:
120g butter, softened
120g sugar
2 eggs
240g self raising flour
Added ingredients:
30g honey
1 tsp orange essence
1 tsp lemon essence
2 tsp vanilla extract
1 vanilla pod seeds
140g sultanas
140g mixed chopped peel (homemade is the best!)
2 x 18cm diameter cake tins at least 8cm deep
