A lot of you ask me why I am so happy to give away our C&D Bakery recipes...I dunno, I'm just nice I guess! And it would be selfish to keep these amazing treats all to ourselves, especially when many of you live so far away that popping to the shop just isn't an option! All I ask it that you take lots of pics and tag me in them on Instagram (@cupcakejemma) so I can see you handiwork. Now...are you ready for the most awesome cake EVER? This is the amazing Snickers Cake!
Recipe:
For the Peanut Sponge...
315g soft unsalted butter
315g caster sugar
125g peanut butter
5 large eggs
315g self raising flour
pinch of salt
4 tbsp milk
For the chocolate sponge...
290g plain flour
310g caster sugar
55g cocoa powder
3/4 tsp of bicarbonate of soda
1/4 tsp salt
3 large eggs
200ml cold coffee/water
200g buttermilk
175ml vegetable oil
For the caramel....
200g caster sugar
120ml water
245g double cream
1 tsp vanilla
For the peanut nougat...
60g butter
225g caster sugar
70ml evaporated milk
240g marshmallow fluff
1/2 tsp vanilla
75g peanut butter
150g chopped salted peanuts
For the peanut buttercream
150g soft unsalted butter
80g peanut butter
340g icing sugar, sifted
3-4 tbsp milk
For the ganache...
300g 50% dark chocolate
150g unsalted butter
150g double cream
Extra peanuts for sprinkling!

I have made this cake twice. Once as the exact recipe which was delicious enough but second time round I swapped out everything peanut with hazelnuts. It was divine.... Definitely one to try

Thank you so much for sharing this detailed tutorial! I tried making this cake for my brothers birthday - he’s been asking me for a snickers cake foreverrrrr and this one was so good! It tasted almost like eating a snickers bar and was so delish! I followed the recipe as is, used regular flour + baking powder (instead of self raising flour / couldn’t find it), and pretty much made everything as directed and it turned out so good! The only thing I didn’t make was the caramel, I used store bought caramel, but the cake turned out so good overall in case anyone is wondering!

I am from Tennessee in the USA. I made this cake for 11 year old nephew. The only thing I did that was different was I made salted caramel icing. It turned out so beautiful and was the most delicious cake I've made yet. Im a hobby baker who loves to make birthday cakes for my family. Thank you for sharing your recipes. This one is a keeper for sure.

I am making this cake with my grandkids, I have done a lot of the prep work but will make the ganache and assemble the cake with them. It is a lot of work but everything i have made so far tastes incredible and I can only imagine what it will taste like all combined.

Snickers is my favorite candy bar, although Ritter’s Hazelnut runs a close second. This cake looks scary good.Thank you for the Ganache tips. If there’s a way to keep it shiny that doesn’t involve corn syrup, I’m there for it.

I want to thank you for igniting my passion for baking again, I used to do it years ago, lost interest doing it. Coming across your channel was an absolute delight, I've bought the book, and so far I have done, Blueberry Crumble cake which I LOVE, Lemon Drizzle is a weekly event and I have to make 3 of them one for my son to take to work, because they all love it. One for my mother-in-law and one obviously for us, I have made the chocolate overload cupcakes as well. So thank you for explaining in clear precise English. And a big THANK YOU for your generosity of cutting it so we could see how sliced pieces looked inside as I know you could have taken to the shop to sell instead so very much appreciate it. Just made it and it is epic. I would recommend more butter cream. Even with using just enough to make a shallow well for the caramel, I was one layer short. But - if you don't show your guests the video, they will never know that you only have seen instead of eight layers. BTW, the nougat is exceptional.

Hi Jemma! I took the nougat recipe and added it to my toblerone cake, but instead of peanuts and PB I used honey, flaked almonds and ground almonds! It worked! I was ridiculously nervous about it lol 😆 thankyou though! Xx

I have made this cake. It was a succes without using the chocolat cake part. Somehow that kept on failing and I had to replase it with a easy mix. I'm still wondering where it went wrong. I tried the water and the coffee version. Ive got happy neighbours tho :)

I’m in the process of making this! There is no marshmallow fluff available in the stores in my country, so I had to DIY it using golden syrup (also had to make it myself), sugar, water and egg whites - it turned out so good!!! As I’m writing this, the chocolate sponge is sitting in the oven... Super excited to assemble and gift it to my boyfriend for his birthday this Sunday 🥰 Will update ya’ll how it was! But I’m sure it’ll be amazing... if I don’t mess it up lol

Dear Kasia, Could you please write in more detail how you made marshmallow fluff, the recipe and how many products are in grams. We also don’t have marshmallow fluff in stores .. Thanks in advance!:)

Genvej 99 Sure, it was a task! Most marshmallow fluff recipes require pretty basic ingredients, except for... corn syrup/glucose syrup which I couldn’t get in the store either. I learned that a pretty good substitute for corn syrup is golden syrup, which is made of sugar, water, and a little lemon juice - there are tons of recipes for that online! I intentionally made it lighter in color - just caramelized for a little shorter than required. The recipe I used for the marshmallow fluff is available on sortedfood.com and is called “HOMEMADE MARSHMALLOW FLUFF”. It’s super easy and the only “fancy” thing you need is a thermometer that goes up to 115 Celsius. Btw, my nougat turned out delicious! Just like the one from a Snickers bar :) Good luck!

Genvej 99 Honestly, the sponges are perfect, but the buttercream tasted like pure sugar to me - which I guess this kind of buttercream is supposed to taste like but it was way too much for me! I also am a huge hater of butter based frostings in general lol, so instead I made a mascarpone based frosting - 500g mascarpone, 100 grams of butter, a cup of smooth peanut butter, vanilla extract, two generous pinches of salt and powdered sugar to taste (maybe 7-8 spoons?). I will actually try the cake on Sunday, so I’ll make sure to let you know how it tasted! (But the individual components are amazing)

hi Jemma, love your masterclasses and videos. Thanks for all the tips. I made a butter cake flavoured with pandan (Screwpine Leaves) essence, coconut milk and palm sugar last week (this combo of flavours are a hot favourite here in Malaysia). While the cake was moist and tasted fantastic, it sunk in the middle and I'm not sure what i did wrong.

I don't know if you've tried it but search in youtube for marshmallow fluff, there are easy recipes for it. I've never done one myself but i heard it tastes much better than store bought.

Yes you can make it yourself. If you can buy corn syrup where you are you can make it in one step. If you can't you will also need to make a subsitute for that. Bigger bolder baking has video's on how to do that.

Alison Bell It’s Lescure butter which is a French brand of butter very popular with patissiers. You can order it online and I think some shops in the UK stock it. You can get it on Ocado too.

I just bought the book and was so excited to make this cake, but I noticed that the ingredient ratios in the book and on this video are different-do you know what the differences between the two are (e.g. is one more rich and the other more light? Something else?) I see that the book recipe calls for 8” instead of 9” tins and is decorated differently, but it seems like although the peanut cake recipe seems scaled down accordingly, the chocolate cake actually has increased quantities. Wondering if this was a typo, or intentional-ultimately wondering which recipe to use! *Update/edit:* I just noticed that the chocolate cake recipe for the Ferrero rocher cake video is the same as what’s listed in the book for the Marathon/Snickers Cake, and that cake is baked in 9” tins. So my hypothesis is that they slightly changed their recipe for the chocolate cake after this video was filmed but before the ferrero video was filmed, and that there was a copy-editing error in the book, such that the peanut butter cake recipe was scaled down, but they forgot to scale the chocolate cake recipe for 8” (instead of 9”) tins. So my plan is to either scale up the peanut butter cake (i.e. use the recipe in this video) and bake in 9” tins (and follow the chocolate cake as-written in the book), or scale down the chocolate cake and bake in 8” tins (and use the peanut butter cake recipe as written in the book). Hope other folks find this helpful! Update/edit #2: In the book, there’s the same error for the ferrero rochet copy editing issue-the hazelnut sponge is scaled down for 8” tins, but the chocolate sponge recipe are the quantities for the 9” tins. The cake recipes also says they make 8” cakes, but because they call for 8” tins and then trimming the layers down to 7”, it’s actually a 7” cake (+ however much width the outer buttercream adds).

Hi there a heavy cream is the American name for Double Cream so go ahead! 🤗 Light cream=Single Cream in British English too.
