It's really satisfying when the joins line up flawlessly. The old uncle free handing his joins with his hammer and chisel is just something else. It's like a human CAD with CNC precision.

The wood they are using looks like butter.

I don't understand that first joint, specifically the slight wings? toward the bottom of the tenon. The sort of arrowhead feature for the tenon will hold it in place but those wings just seem like a way to increase the surface area where those pieces meet? I don't know, love a joint you can see or has an important function but that joint looks a little overdone

Actually these different types wood joints are verities of wood working engineerings.

I wonder how many things fall on their heads during their lifetime in that shop where there is nothing overhead to fall on them? Are hardhats needed or is it some clueless uniform concept that they have adopted?

That can have many reasons. Could be mandatory by law for working in such an industrial sized hall. Perhaps the insurance company which covers work related accidents demands it. Japan being prone to earthquakes could pose a risk of ceiling parts or lighting falling down. One thing I can assure you, there is nothing clueless about it. Japan is not like China where workers get mutilated (squashed or bodies torn apart) daily because of the lack of safety measures.
