Man I've been doing this lately and I agree. You can come up with unique fills and grooves. It also helps understand how modern drumming works. On the other hand it is funny as it shows that we have been learning drumming all wrong imo. This is exactly what drummers did with triplets in the 70s. Like Bohnamn. Get a triplet and replace a hand stroke with a kick and you have the classic Led Zeppelin fills. Do that in 16s notes and play a fast metal groove and the fills will sound great and they will be a lot easier to play than only using your hands.

I like the wood music stand! Jazz drummers do this a lot with the last note of the paradiddlediddle. I sometimes do this with doubles and inverted doubles. Most of the time, however, I don't plan it out with any specific rudiment. I just let my hands fly, playing paradiddle-esque combinations of singles and doubles, and occasionally "interrupt" them with the bass drum. I'll sometimes use a remote hi-hat with the footboard on the right, and substitute some of the bass drum notes with an 8" hi-hat (I love the sound of two very different hi-hats played with the feet in a fill).

Great question. In this video the toms have a circle around the note head. All toms are notated on different lines and different spaces depending on their pitch. Basic rule is: high pitch = high line in the notation system lower pitch = lower line in the notation system For more info check out the free course on how to read and write drum notation on the artofdrumming platform (link in description) Hope that helps.
