what a great tip about faster flowing grinders. I like Londinium as a default with my Flair Pro2/Eureka silenzio, and with my fave brighter blend I just kept it down to 6 bar and wow it really tamed the acidity! and let the chocolate notes stand out instead of the pink lady apple notes commanding all the attn. maybe I'll experiment with longer pre infusion next since mine is about half the time as yours

I really liked this video! Would love to see similar content. In particular, I was interested to hear that you can expect more sweetness from the “gentle & sweet” profile because of the 9 to 6 bar change. I pull shots on a Flair so it gives me ideas to try to replicate manually, even if all the real-time data I have is pressure and grams out.

Great video. I appreciate this as an owner of the Flair 58. I have been recreating some of these profiles and I especially like the blooming profile. I use it as my default profile nowadays because I drink almost exclusively light roasts and it's delicious every time.

Yes! Hey, I was wondering… i have a Baratza Vario grinder which does well with an Appartamento but I’ve seen John mention Baratza grinders aren’t great with Decents. I’m going to start with it to get a good baseline but when I do eventually upgrade do you think the Niche would yield much better results or would I be better off stepping up to something like a p64 or Acaia Lunar?

Playing on La Pavoni with little knowledge on modern espresso that I’m attempting to learn. Looking forward to future videos and applying those ideas to my own shots! I have a faster flowing grinder, and feel like I’ve been taking a somewhat misguided approach. This really cleared it up for me, and I’ll probably do some lower pressure shots to get more sweetness!

Brian, a good video idea might be exploring body in espresso using the Decent. A good amount of people are on the fence about it because of the original Home Barista review that stated that the DE1 couldn’t replicate the same body and mouthfeel he got from his LaSpaziale Mini Vivaldi 2. I know that review is old and many things may have changed so I’m wondering if you could share your experience or insight. I love full-bodied syrupy shots.

IMO, that still holds, even with the new versions of the machine with less headspace. you have to do a bit of overdosing and spacer/bplus screen use if you want to get a full body syrup. I would love to know how to replicate it on a decent 1 to 1, but I dont think the machine is best for that style of shot. Its great for flavor separation and light roasts IMO (which i love). If Brian knows a better way it would be a great video too.

just a side note, i have a conical and you can still have a lot of success with turbo shots. you will get a comparable fruit forward taste like allonge. However, the fruit is usually more mixed (less clarity separation).

Thanks Brian! I think Default is a great all-rounder, which performs well (but not necessarily great) across all beans. Specialised profiles give you more special flavours, but Default is such a great starting point

Btw, are you going to do a video on the parameters of the Default? What happens if you elongate PI, hold pressure longer, higher/lower peak/end pressure..?

Hi there, I got decent XL 1.4 and i am facing a little problem when i make any shot of espresso In default profile it is doesn't stop automatically, it is weird because it is mention at Decline level stop at 36g, can you help me ?

So I’m a newbie on the decent….. does it control both the flow of water and separately how much pressure is in the portafilter?

Grind size determines resistance in the puck which allows for pressure to accumulate in the portafilter.

The decent machine has parameters that you can customize. It will adjust the flow of water to regulate how much pressure it senses in the portafilter. Regulating flow is the only way it can regulate pressure.

Flow is the dependent variable and is determined by a combination of puck resistance to flow and the applied pressure. Zero pressure results in no flow. Infinite resistance results in no flow (more or less). The Decent machine controls only pressure and with that it indirectly controls flow rate. A flow limiter can be set in a profile which, if exceeded, will automatically reduce pressure to limit the flow rate.
