I love how James knows exactly what's up with "concealed" and then just enjoys the outcome with a slightly malicious grin 😆

Sounds similar to the Irish moss drink that used to be popular in Jamaica.

Sounds like that stuff is what carrageenan comes from! You'll see carrageenan as an additive in a lot of foods, it's a natural thickener.

You can try something funny BUT delicious from Tunisia: it's called mouloukhia and it smell a lot of henna (which is a plant that is probably edible... I guess). It looks like a liquidy hoummous but is the colour of mud (I know, I'm not selling it very well!), it's a bit spicy as in hot, and usually cooked with beef and you eat it with bread. I swear the first time you see it you have to blink a couple of times and be reassured it is edible but the minute you taste it it's pure bliss. Try it.

Made of jute leaf or Jews mallow I think it's called rather than henna though I wouldn't know if there's a relationship. My in laws make it (Egyptian origins) defo strange gloopy texture but a big fave even of the niece!
