The only skiving knife you will ever need

These are my two skiving knives. I compare the relative merits of Carbon Steel compared to High Speed Steel (HSS).

They have a new skiving knife now, it's cheaper than the hss and more expensive than the carbon steel

I agree the hss is a bit hard to sharpen as i have the exact same knife. At first, i thought i sharpen it the wrong way (using just sand paper 300, 800, 1200 grit).

Aliexpress have 400/1000 double sided diamond plates which work really well. Just use water on the plate to float away the swarf.

@@wirracreekfarm cheap diamond stones are garbage and become useless witching a few uses. Also you never use water on diamond stones as it will cause the steel plate to rust. You only use lapping fluid, honing oil or possible (but not ideally) we-40 or motor oil. Get a TREND or DMT stone or don’t bother with diamond stones, especially not the cheap Chinese ones. Garbage.

@@AlexanderMason1 If the plate is not stainless then yes it will. These plates are stainless and have not rusted over several years of use. The cheaper diamond plates are indeed not really good sine the diamond coating is very thin. These are mid priced plates that are bearing up pretty well but I would like to get some better plates eventually. Also if you clean and dry your plates properly then you should be fine. The problem with oils is that any residue can contaminate your work.

the terms high speed steel and carbon steel are probably much too broad to make blanket statements like 'hss is harder than carbon'

Technically true. You will find that the vast majority of CS blades are on the lower end of the hardness scale. You certainly can get specialty CS skiving knives but they are rare and far more expensive than this HSS skiving knife.
