Yep. It is Vader. It might have been that you need to win with Anakin to be precise. I think those other characters that @setyourhandlex mentioned were accessed using cheat codes.

I’ve been trying for years to remember what this game was called, had it on a demo disk back in the PS2 era of mailbox delivered demo disks. Played it way more than I should have considering I also had all the MGS games in the same house. Edit: Also the soundtrack was indeed amazing.
