To really get an idea of how amazing this plate is get this - the garnish is a quesadilla. Yup. Now add the fresh fried tortilla chips smothered in refried beans and melted cheese, topped with sizzling fajitas and garnished with onion, tomato, and pickled jalapeños and you have a meal fit for kings.
Here is your pro tip: If the restaurant says it’s for “two” then it actually serves six. If the menu says it serves “four” then make sure you bring an army to help finish it.

Back in 1977 there was a cantina in San Benito, TX. One of the best years of my life. I don't remember the name of the joint but my Mexican friends and I would go there to drink cervezas, dance cumbia, and eat their botanas. I would be the only gabacho there but because I could habla I always felt welcomed like family. There was always queso, chips, salsa, frijoles, carnitas, fresh tortilla's, barbacoa, pickled jalapenos, onions, limon, and ever thang else to make taco botana's fixin's. That was a long time ago when Freddy Fender "Wasted Days and Wasted Nights" ruled the jukebox. The men were macho but polite, and the women were hot and could cook. I don't reckon the Rio Grande Valley is like that anymore.
