Riff historian meets pedal archivist! Such a powerful educational duo! Also: Mayo goes on the bread because it has a flat topography and rough texture (essentially "bubbles" in the bake) that accommodates an even and controllable distribution with a knife. Putting it on an uneven and impermeable surface produces inconsistent results. Mind, if you're applying mayo from a squeeze bottle without the assistance of a knife afterward, the results are probably "good enough" AND you don't have an extra utensil to clean later!
