I think your MacDaddy is a pan made by Birmingham Stove and Range. It looks like the Century model 12, 13 7/16 which was unmarked. I am going to try the Musket Powder, it looks like a good steak seasoning. Love my cast iron cookware also enjoy your videos. Moved back to the farm I grew up on and enjoy the farm life. The brand of the cast iron “2 hand pan” is BSR which stand for the Birmingham Stove and Range company. They made the Red Mountain Series and the Century Series pan sets. Yours would be considered a century series.

Hi Meredith, Those steaks looked perfect! Sometimes I butter a slice of bread and after the steaks are done, fry the bread in the steak juice/butter in the pan. Makes steak flavored toast.........Think I need steak for supper now.

I have only recently pan fried meat ,,always broiled,, felt it was pretty much the same as grillin' except heat source from the top instead of the bottom...Got to agree , med rare to med does it for me ,, I just watch the clock..4-5 minutes per side ... Hi Meredith. So this episode was especially helpful, with the red potato operation and that myloglobin reference. There is no doubt I will be forever making potatoes just like you've taught here and I'm actually kind of excited about that which surprises me. I'm out back burning stuff down right now but later I'll study myloglobin because, well I'm not sure exactly why, but it sounded interesting how that may not exactly be blood. May have my spelling off a little but thank you for this episode of TFW Cooks - I think it was really neat!!

Looks so good. You could boil the potatoes in water first. You can never have enough cheese. Could you use a deep cookie pan cover two burners to cook with? Makes it like a flat too grill. I like my steaks med-well. My mom way well done burnt 😂😂. I have trouble with rual and words with r, l and a few others sounds. I have a slight speech impediment. My dogs are like Bonnie. They just sallow food, don't chew it.haha

Agreed....medium rare is the optimal way to cook steak. A friend of mine says...'wipe his butt, knock the horns off & send him out'. He likes his steak (really) rare!

I have the same cast iron skillet and I love it for family get together. Red taters taste the best and I'm going to be making these taters for for Miss Annabelle cause she says yummy. A little trick to the rough cast iron is a oscillating sand and medium to fine sand paper then season feel and your good to go. This meal will be coming to my table really soon. Meredith how did you cook the red potato's? Before you smashed them I suspect you boiled them for 10 minutes? One suggestion to enhance your smashed potato's is I add a pad of butter on top of the cheese. I also use season salt with pepper and they turn out wonderful.

Went back and re-watched video and for some reason the first time the microwave info skipped to the smashing. LOL I have tried you smashed potato's by boiling them it was awesome. I was a catastrophe adjuster for 20 years and have some very simple recipe's for the lazy cook who has to feed people quick. I had to semi retire to take care of my 86 year old mother who has Alzheimer's. Thank you for all you do. I have worked claims all around your area in the past 20 years and love the area.

You can bake them at 450 degrees for and hour for small taters. That's what we do instead of microwave in case others want to use the oven

Last years' steaks look good to me. Better than day-old bread! Just ordered more Musket Powder, but Red Label this time. Have you ever noticed when dogs eat, they don't chew? They gulp! I suppose it is an ingrained habit. They bite and gulp to get as much as they can before the other dogs do.

Next time, pat the meat dry with a paper towel before seasoning and before placing in the pan, and use a high smoke point oil in the beginning like avocado oil. If you really don't want to use oil, use ghee instead. Regular butter will burn and turn black at a much lower temperature than what you want your pan to be at to give the steaks a good sear. You want the butter to be brown and foamy, never black. After your first flip, turn the heat down to medium-low, add butter to the pan and possibly thyme/rosemary/garlic, tilt the pan and baste the steaks with the butter until you are done.
