I'm the appointed devil egg guy in the family during holidays. I make many different flavors. Smoking eggs has never crossed my mind. I can't wait to try this. You're a smoking genius!!

I pop the eggs into a muffin pan , then I get smoked egg rounds to put on a biscuit. No shell to deal with either.

Watched this last night... looked great. Went to the market to day, and no chicken eggs... So I used duck eggs, holy smokes! Best deviled eggs ever!!!!!

I boil my eggs till just barely done, cool, and peel then smoke at 250 for about 10 to 20 minutes. I only use them for deviled eggs so as long as it's not green I don't mind if it's a little dry. I always get rave reviews when I make them. Smoked paprika and/or chipotle chili powder are great add-ins. Thanks for the video, I enjoy watching.

A buddy of mine makes the smoked deviled eggs just like that but he adds an avacado and some jalapenos to the mix, so good.

Oooohhh! I love deviled eggs but must admit that I have never tried them smoked, so maybe I should give this a go. Certainly looks delicious, and with a cold beer and a Schnapps the world simply becomes a better place to be! Thanks for another great and inspiring video 👍

I do them all of the time, the best way to do them to me is lightly boil them on the stove first, then shell them & then i wrap them in bacon & smoke them for about 20 or 30 minutes..Man they come out awesome every time with great smokey flavor..I usually cut them in half & make smoked bacon wrapped deviled eggs...

My Mother used to top her devil eggs with a tiny bit of caviar, it adds a bit of saltiness. I bet it would taste amazing with smoke.

That kamado Joe must have some crazy infrared or focused heat. I do smoked eggs on the Weber kettle or offset at 200 degrees american for 2 hours and get perfect yokes. (Flip at one hour so your yoke stays in the center.) The harder/denser the wood the better penetration through the shell you will get. I like oak Heartwood on my eggs, then the white gets a little brown as well. Pro tip. Let your eggs come to room temp before smoking, then you won't get that mottled staining. But a nice even milk chocolate color

You could try poke 1 pin hole at the bottom/top(?) Of the egg to to release the air pocket inside for easy peeling or maybe smoke penetration.

This probably has nothing to do with the price of eggs but in the US, our deviled eggs have sweet pickle relish, sugar, mayo, mustard, celery seed and with parika sprinkled on top.

I think I’d go with pecan wood for smoked flavour! Less harsh than hickory and more delicate for eggs! Cheers 🍺🍺

i,ve smoked A LOT of stuff,and it improves or adds flavor so good,nothing beats it.With eggs,remember eggs greatest feat is to be almost impervious to outside cooties(almost),and that makes smoking eggs a bit harder to pull off.After about 6-7 min.(approx),carefully tap 3-4 decent cracks on the shell.Now,smoke( and flavors) can enter the egg,and really flavor it.

Been tweaking this recipe for a few years. I now prefer make the deviled eggs the normal way but I steam them for 12 or 13 minutes instead of boiling. Maybe 13 to14 minutes for extra large eggs. I use this yolk recipe and adjust to taste, then cold smoke for about 45 minutes. Cover and chill overnight to let the flavor mellow. I like to garnish with either hot Hungarian paprika, chipotle powder, or smoked paprika. Also, my favorite ingredient I like to add, garnish the eggs with candied jalapeno.

We hard boil them, peel then smoke with apple wood then make deviled eggs at the restaurant I work at,..... OMG, SOOOOO GOOD! We also put a pan of ice under the eggs to keep them moist while smoking

I just boil my eggs and smoke them till they are golden. I like pecan smoke and do them in my smoker made from an old gas oven. They make great deviled eggs and I add horse radish to it. They are great and look nothing like these. Dont put in fridge after smoking they will turn to rubber. Its a cold indirect smoke and they are very good just out of the smoker. I smoke anything I can salt, nuts cheese ect.

I hard boil them,, peel them, pre heat and get the smoke heavy, turn my heat down to 175 degrees for approx 1 hour with mesquite and a water pan to keep the eggs from dry them too much

Try pickling the smoked eggs. You also should try finishing the deviled eggs with a sprinkle of smoked paprika.

I hard boiled mine peeled them and left them on a pellet smoker on the smoke setting about 180° for 40 minutes Afterward I thought that the smoke was intense smelling so I let them rest a day to mellow out. they were perfect. highly recommend the days rest

I was thinking that too. Probably had to do with the pre boiling, maybe got cooked shorter before hand.

Doubt those were smoke points. If they were they were probably cracks in the shell. Most likely where the shell came into contact with the grill grates. Going to try this out this weekend. I'm smoking a couple pork bellies and it will be a nice snack while i'm working!

You could use a silpat type grill guard to keep the eggs from sticking.

I have smoked eggs before. Boil them the way you like them. Then cold smoke them. That way you can put as much or as little smoke as you want without affecting the outside of the egg. I like mine smokey. If you hot smoke them then they get rubbery on the outside.

If you let them temperature in your smoker get over 100 degrees the eggs will start getting rubbery

You have to crack the shell before putting in to cold water to make it easier to deshell!

To smoke an egg start with a pealed soft boiled one and use hay to give it smoke without heat. It only takes about 20 minutes.

Hey. I smoke eggs all the time. Crank your heat down, smoke longer. Then cook. More of a cold smoke, like cheese!

I do my pork butts at 200-225F (cheap smoker bounces around temp), could I throw eggs on with it? What temp & time you use for your eggs?

The eggs need the creosote wiped or rinsed off. I'm guessing that's your "ashtray " flavour. More smoke doesn't mean more flavour penetration, it means more buildup on the outside of your food. Delecate foods like eggs? Gotta get that creosote off. (Or use something like maple)

Hey dude. Try using smoked coarse salt instead of plain coarse salt. Will add that little bit of extra smokey goodness to ur eggs.

My bet is that you could boil them to done and then cold smoke to pick up the smoke flavor without worrying about overcooking

He was shell smoking at 250F, and was getting them cooked faster than the smoke could penetrate. What you think about 200 for a longer smoke soak? I do my pork butts at 200-225 (cheap smoker bounces around the temp), I might throw some eggs on.. since its only like $4 for 3 dozen

Being mayonnaise guys, I'd love if you could get a hold of Duke's Mayonnaise from here in america and give your feedback on it. Maybe even do an international mayonnaise taste test. I just recently discovered Duke's and it has changed my world lol.
