Mouth-watering indeed!!!!! This is our dream episode and you nailed it!! Knox is so great at describing food. I want to taste that crispy skin so badly! I wish we were there with you. Acknowledging Always be Changing as one of the travel vloggers in the Philippines, just to give you an idea many regions in the Philippines have different styles in cooking lechon as there would be rice, crab meat and clams inside the cooking lechon boiling these inside ingredients in pigs fat for hours giving that umami in the seafood rice. Some have more base liver sauce or a combo of liver spread and liver sauce as comparing the price ranges which market sold lechon is cheaper yielding more crispy skin and normal taste of more pork lechon meat. Yet lechon is not limited to pigs but they have beef lechon which is a whole cow cooked in the same style as lechon and lechon manok which is a whole chicken also cooked in a rotisserie. As they say meat cooked on the grill taste more juicer but that said the seasoning and flavoring from different lechon of the regions in the Philippines is abundant. Hopefully you try the vegan banana heart lumpia and other vegetable based cuisines in most Cebu restaurants as lumpiang ubod and lumpiang toge is common as a vegan roll around the Philippines. Also diversity of fruits like durian and fruits in the fruit stands is a must.

Also they have grilled tuna jaws like a whole tuna steak at the Sugba, hopefully charcoal ice cream is still there and the native chicken Siningang in banana leaf and if the Buchi balls which have different fruit and chocolate flavors in a sesame seed covered dough.

It’s really in Cebu you can find the best LECHON ever. I have a friend in Manila who is a Cebuana-Chinese who have a LECHON business called LECHON FAMILY. That IT food market is festive. Enjoy the rest of your days in the Philippines.

husband speaking age 80 - checking in - my wife's home area. Lechon is so different in Cebu then in Manila. We usually send a Cebu Lechon to her brother in Makati for Christmas. It is cooked and flown out in the morning and her brother goes to the airport to pick it up. Personally, I do not eat pig this way, give me a regular U.S. ham.

PUSÓ is cooked rice stuffed in woven young coconut leaves shaped like a heart. In Filipino language, heart is puso. The heart shaped weave is filled with rice up to 2/3, sealed then dipped into boiling water, once cooked the pusò gets filled with aromatic rice, moist and best paired with lechon, BBQ, seafoods and other grilled faves ! ❤❤❤ Now am salivating 😅

@Ask_Xel...No. Its shape is definitely not a heart but a three-dimensional diamond. The Cebuano term for heart is 'kasing-kasing' not 'puso' which is a Tagalog term. The 'puso' in Cebuano language has two different meanings depending on the pronunciation. The first pronunciation of 'puso' whose stress is in second syllable and a glottal stop at the last vowel is the one used for the 'hanging rice'. The other 'puso' whose stress is at the first syllable also with a glottal stop at the last vowel is a term for the banana blossom and ear of corn or maize. The second pronunciation of Cebuano's 'puso' is the same as Taglog's 'puso' for heart. Aside from diamond shape, the other most common shape of puso is 'binaki' (froglike) using two coconut leaflets. A diamond shape 'puso' is using only one coconut leaflet.

@@AskXel Those people who taught you that 'puso' is shaped like a heart were definitely naive about their own culture if they were really Cebuano natives themselves. The shape of 'puso' definitely doesn't look like heart. Cebuanos clearly know that the Cebuano word for heart is 'kasingkasing' not 'puso' as in Tagalog. Now, if I were to ask you, 'Does the shape of 'puso' look like heart to you? Google the shape of a human heart and compare it to 'puso' if they look similar. Then look for an image of a mango and place the three side by side. Take a close look and study carefully which two images look very identical. Chances are, it's the heart and the mango.

My mouth is watering right now 🤤🤤🤤 LECHON is one of my favorites and I'm fortunate enough to have a restaurant across the river in Portland Oregon where I can buy it by the pound along with roast duck , char-siu , hum bao's and several different types of dumplings 😋 What a great experience for Nia and Knox to sample all the amazing flavors in the Phillipines........Love you guy's channel 😊😊😊

I felt jealous watching you having such a fantastic time at Sugbo Mercado. I stayed at IT Park just a few blocks away last December but never got a chance to eat there during this visit. Time flew so quick and I sill wonder how I missed it. Thanks for sharing.

Wow you were so close! Time flies right? Well that just means you have to go back and visit. There’s no way you can miss this mercado. It’s our fav one out of all the ones we’ve been too. Not only is it lively but family friendly too which I loved. Best Food Ever! We still talk about it as if we were just there yesterday🤭

Someone else mentioned that it’s the juice from the Lechon. The boys said it tasted more like “chicken broth.” Do you usually eat Lechon by itself or with a sauce?

Hi, I can hear the crunch crispy sound and that the lechon was so freshly cooked came out from the roasting room. It goes great with "acharra" or sweet and sour pickled papaya to counter the fatty taste. And check your BP right after arriving home! 😀

@MomDuty...Don't you know that Sugbo is the local name for Cebu? As you may already know, 'mercado' is Spanish for market. Yes, Cebu is an Anglicized form for Sugbo. So, Sugbo Mercado means Cebu Market. Most vendors there are well-curated as it is an incubation hub for food-techpreneurs who want to introduce their products to the market. There have been many successful ventures who started in Sugbo Mercado but now have multiple branches in Cebu City like Ally Mango, Swirl, Humba Haven, Hyderabad (Indian Cuisine), Kusina Guadalupe, etc.

@@MomDuty I just find it ironic that just a couple of decades ago, they hated each other, especially during WW2. Fact is, when the Japanese occupied the Philippines, they brought along conscripted Koreans (after the Japanese invaded Korea) to man their garrisons here in the Philippines. These Koreans were as cruel as the Japanese towards captured Filipino and American soldiers. And now, both nationality are among the top tourists here.😄

I’m pretty sensitive to spice also but I’m addicted to the feeling inside the mouth. I was dying when Nelvine said that about the vinegar/soy sauce container🤭😆 Oh my gosh?! You noticed Nia filming? Wow! You’re very observant my friend. Yeah she was trying to get another angle but realized at the end that she didn’t even have the camera on the whole time🤦‍♀️lol. Rookies😂 I have no idea when Knox gets these words from to describe food. It surprises me as well once he starts to talk. Nia likes anything with rice. Including spam now.lol. She’s a carbs girl😍🍞🍚 That ube shake was bomb🤤craving it rn too. So creamy! Perfect after anything spicy.lol. Those tourists were SO NICE!!! What's stuffed inside the belly of the roasted pork is "TANGLAD" or the Lemon Grass tied folded with added seasongs that adds flavor and aroma to the lechon.

Back then one can actually buy Lechon in Cebu and have it checked in on a domestic flight to Manila Ninoy Aquino International Airport. They actually put a flavor injection on one. Sadly you can't take it from CEB to SFO/LAX via South Korea Singapore and Hong Kong since it needs to be declared to the CBP

# 3 the food market was interesting but I am usually in bed by 9 pm - up at 5 am to walk the doggies. Congratulations on your Wedding Anniversary. coming up. I did see that video in El Nido. I have mentioned how long I have been married to my Filipino lady. I was out of the Air Force and finishing up in college. I found her sisters name in a Teen Magazine pen pal page. I collected stamps and thought the PH was an exotic place and the stamps would be pretty neat to have, and have another lady to write to., Before I graduated Linda said she was coming to Pa. on a marriage visa - so ok anyone else I can write to ? her sister was teaching grade school and we started writing - one letter every 6 weeks to 2 months. Five and a half years later her sister petitioned their mother, she arrived and did the same with Eflida - back then it only took two months to come over. I was age 34, never married and thought I would be a bachelor for ever. I go to Pa. for a 2 week visit - 3 days later I am engaged, 4 days later we are married 7 -27-1977. so we ar starting our 47th year . Hopefully we will meet in Jan 24 at your meet and greet.

# 2 it's the skin that locals go for first. I really think they could leave the meat, just give them a plate of skin. My First trip to the Philippines with my new wife was 1979. Her brother had a house warming going on in his new house. Haise street in Makati - back then there was only 2 or 3 homes on that street for blocks. The phone line was 3 or 4 blocks away and took 3 years to get to his home. They had a big Lechon and the next day at lunch Noli brought out the head and started carving on it. That is a hard NO for me. Just give me some rice.

The sauce they provided I think is not a sauce. Its the juice from the lechon infused with all the spices and fat from the pork while being roasted.

You don’t have to. Some people wants lechon juice poured over the meat and rice. But its not considered a tradition somewhat.

​​@@MomDuty Cebu lechon is best without any dip .. IMO. That sauce pour over is Carcar style. It's lechon drippings saved during roasting. ❤ But big YES to zero waste

@@MomDuty yes, here in cebu we use soy sauce, vinegar/kalamansi, chillies/red onions as a dipping sauce....The Carcar lechon style is they have that lechon sauce/broth that the lechon vendor will pour all over the meat. But if you want a take out/to go, advice the broth put in a separate container.

The guy who worked the stand said it was spicy. Knox will try anything and everything but he is SO sensitive to spice, even black pepper. He doesn’t enjoy the kick and ends up drinking so much water to wash the food down. So we let him decide. He knew he would enjoy the siomai by itself and he did! It was his fav food at the mercado 👌

Black Saturday means it's ok since we Filipinos shouldn't traditionally eat meat during the suffering of our Lord Jesus Christ. Given that you watch them and also failed to tell them the observance plus they are not Filipino to stick to the tradition it's ok

Our intention was never to be insensitive. Before posting about lechon this week, we asked some locals for their thoughts. Based on their feedback, it seemed acceptable to post about it on any day except for Thursday or Friday, as people still consume meat, chicken, or fish during this time. However, we made the decision to postpone our post until after Good Friday as a sign of respect for Holy Week. While we may not observe this tradition ourselves, we wanted to show our respect towards it🙏
