I used to add a new kind every year, I took over making the fudge in the family after my grandma no longer could. I have never used a therm.Maple was one of my favorite newer ones along with amaretto, pumpkin is good as well.

@@AmynAL My Nanny made Divinity. The weather was a big factor. Nanny saved Russell Stover candy boxes and put the Divinity in those boxes. I have never made it, but I don't have a Russell Stover box! They just wouldn't be the same! 😬😊🤣

My mom made these every year along with divinity. My mom would get a huge bushel of pecans for her holiday candy making and baking. It was my job to crack and shell the pecans. She had this metal nut cracker that screwed on to this big bench she had on the porch that my dad had painted green. I hated having to do it but knowing there would be pralines kept me motivated. You always conjure up so many fond memories for me. ❤

Thank you for this video. I love pralines, going to try this one for sure. I'm also making fudge for the 1st time. I got a laser gun themomiter to use. Sending prayers and blessings for No C. flood victims. Samaritans purse is my go to donation organization. They do such good work. My church just put together to ship 1040 Christmas shoe boxes this year; we were able to fit in a soccer ball and pump, so cool for these deserving kiddos. My mom's special Christmas candy was Sour Cream Black Walnut Fudge. It's the only kind of fudge I like and I made it just once when I had her help. She's gone now and I really want to try it again and get to where I can do it. She taught me soft ball and hard ball stages but Candy has always intimidated me.

My grandma, who lived on the Gulf Coast, called them praw-lines. In the old days, most women didn't have thermometers. Pralines and Divinity were either hit or miss, or the really good cooks knew my sight when the mixture reached the right stage. I have eaten many a sugary praline, but the best are the creamy pralines like you made. For some reason I think they're better with Mexican vanilla.

A recipe for a Irish Christmas dessert : Soak 400g of porridge oats in water overnight. Soak a cup of raisins in black tea overnight. Melt 75g of dark cooking chocolate in 150 ml of milk. Add walnuts & seeds to oats & mix everything together. Refrigerate for 6 hours & serve. It's absolutely delicious & it's healthy. It's lovely with strawberries & cream.

@loisgehman949 I use a seed mix of (sunflower, pumpkin, sesame & flax seeds). You can buy the seed mix in 300g bags for like buck in most supermarkets. I have tried other nut varieties before & Walnuts are the best in my opinion. I'm sure peacans would be fine as well. It has to be dark cooking chocolate though . Sometimes I add a spoon of instant coffee to add to the flavour. Happy Christmas.

A little off in sequence but it looks like will set up good. I know one thing it tastes Devine! My mom was the candy master in our family,unfortunately I didn’t pay attention or realize how important her instructions were. This recipe feels like a carmel beginning method and a fudge finish. They look beautiful! It's that beating off the heat after reaching soft ball-- that is how my grandma and mom always made fudge. Grandma said that if it did not get beaten properly while cooling it would never make fudge, it would just be goo. I think the beating changes the sugar structure and causes it to crystalize somewhat, causing the fudge to loose it's shine. Sometimes it was "ruined" and we were forced to eat it with a spoon! What a tragedy ❤

Talking about the girls wanting the " brown things", I have a similar story: I used to take my daughter to the babysitter at the same time every day and the radio would be on. I generally listened to the oldies station. My daughter was about 5 and one day she said she wanted to hear the song " where the ladies tellthe man to go away". I didnt have any idea what song she was referring to and I asked her if she could sing a little bit of it. She couldn't. So time went on and one day she was excitedly saying that's the song, that's the song. Do you know what it was? Hit the road, jack. The ladies did, indeed, tell the man to go away.

My middle son was around 8 and he asked me to make “gray meat” I had no idea what he was talking about! I cooked several things and asked him so many questions but didn’t get it right. I just gave up. Then I was in a hurry and I broiled some pork chops and he was so excited ! He jumped up and down and screamed GRAY MEAT ! I was so happy to know what “gray meat” but it really surprised me that a kid his age would really enjoy something so plain, I just seasoned pork chops with salt and pepper little garlic powder and a sprinkle of poultry seasoning, broiled until done on one sided and flipped cooked the other side and serve. He still loves them, he is going to be 38 in January
