When I visited the Philippines, I watched them make these. The only difference is that they molded it individually lining the bowl shape molds with banana leaf. Once it solidifies, they just lifted the banana leaf and that becomes the wrapper. Ingenious really. I think they called it Kalamay. Unprocessed brown sugar or Muscovado brown sugar, taste better than refined white sugar.

It's called jaggery. We call it "gurh" in Pakistan.
