There's an event chain that allows you to convert to adoptionism. All I remember tho is you have to be in the region of southern France (kingdom of aquitane), have a decent learning skill, and It has to be the 867 start date

Try to make a hybrid culture with hispano roman if you can Edit: If you can do that using a steppe religion or sol Invictus religion that would be cool

Might be because of a struggle phase in Iberia, I'm not too sure but I know different bonuses appear depending on what phase it is.
