Did you know that when it first opened, Ruth's Chris Steak House had steaks on the menu that were just $5? Yes, that was more than 50 years ago, but still a little surprising considering that it's hard to find a steak on the menu now that's less than 10 times that price. And some are considerably more expensive than that.
So what's the story behind the hefty price tags you'll find on a Ruth's Chris menu today? There are quite a few factors that go into what customers pay, and it's not only about the cut of cow you buy. Here's the real reason why Ruth's Chris Steak House is so expensive.

No piece of meat justifies their price. Plus, I don't like how you have to pay for a steak, then a potatoe, then a salad. Way overpriced. No food is worth that price.

It's not whether it's worth the price at truth Chris: it's whether or not paying those prices at any high end steakhouse is worth it. I say absolutely. You simply can't get that quality of aged meat anywhere under $40 minimum. A specially butcher will charge $30+ a pound for those cuts. I don't eat red meat except once a year on my birthday. I go to Smith and Wollensky for their rib eye. So worth the $60.

I've never been to Ruth Chris and walked out unsatisfied. They always cook to perfection and their meat is a great quality. You get what you pay for for sure just wish it wasn't so expensive and I could enjoy it more often.

If you have never been, how could you walk out????? Is this your failed attempt at humor??? You probably wouldn't know a good steak if it bit your cow off. Now that's a poor excuse of humor, if you didn't understand.

I LOVE Ruth's Chris! My first visit was during Restaurant Week. I have since been back twice at full price and I'll be back again. You can't beat the service or the flavors. It's well worth it. This is coming from a person can sear the hell out of a filet (medium rare) and is always looking for free or heavily discounted. Ruth's Chris is bomb😋

I was a Guest Services Manager for a Boutique hotel in Dallas. I was comped at every restaurant in the DFW area, so unbiased. I judge a stake house by their Filet and Ribeye. I literally ate at all the top spots; Bob's Nick n Sam's Al Bernets, III Forks, Del Friscos, The Palm etc etc. At the end of they day, most were just above average and popular because they are spots to be seen at. Ruth's Chris was absolutely the best steakhouse of them all, period. and Second was Morton's of Chicago.

When the old Atlas Supermarket in Indianapolis closed the managers at the local Ruth's came in and bought lots of the ungraded beef tenderloins for the restaurant. Apparently it wasn't unusual. Don't assume you're getting what you paid for.

I just had a few questions out of pure curiosity..lol Would I be incorrect, assuming each location is independently owned? Does that particular location not do much business? Or maybe Atlas market had THAT much business & stocked up a whole lot of meat in freezer? Lol I guess either way, that's foul- when charging $90 for a steak. Lol

@@bkbekka32 I don't know what their status is, if they're franchises or corporate owned. The location in Indianapolis (and most elsewhere) do a brisk business. Atlas, when it closed years ago, probably did order a lot of the ungraded beef tenderloins. It was the one thing they were known for. The tenderloins usually sold for between $30 and 45 per loin.

Bkbecca32, when Ruth first started expanding, she sold state franchises, in CA, you owned all the stores you could afford to open in CA. Once she got established, she would buy the franchise back, some franchisees were not interested, some were.

Just had dinner at the new location of Ruth Chris in Winter Park Florida, What an incredible disappointment. My steak was dry and the drinks watered down. The decor was at the level of an up scale McDonald's with service was match. I will never go back again. Anyone giving this restaurant higher then a 2 star rating is completely clueless. This restaurant is now at the level of outback and long horn steak house. Ruth Chris at Winter Park is a complete scam and rip-off. Ruth is rolling in her grave over what the restaurant she founded has become.

But can you get dry aged beef like theirs at a butcher? You're going to pay at least $30 a pound. Also, great steaks are not cooked entirely on a grill. They are grill seared and then put into a very hot oven. In addition, a fine dining experience with great service is unbeatable. And you don't have to clean up!

This video is based on a common--but hugely flawed--premise: that costs drive pricing. They don't. Prices are determined by the marketplace. Restaurants can charge only what customers will pay, irrespective of costs. If the costs are too high compared to what you can charge, then your margins will be too low (or nonexistent) and you have to change your business model. Remember, customers have zero insight into business costs. They're paying for what they want to purchase, irrespective of costs. For example, soda costs just pennies, which is why refills are free. (Try that with wine!) You're not buying soda, you're buying the service. This is true whether you're at a restaurant or McDonalds. (Not only are refills free at fast food places, they're perfectly fine with you taking one to go with you. Again, you're paying a couple of bucks for something that costs them a couple of cents. And Ruth's Chris charges what people will pay, not what it costs to provide it.

Wine is a good example here. Often, resto's can command a 50-100% price markup, with next to no equipment or labor cost. Perception is reality.

@@richdouglas2311, some business models absolutely rely on that. Not selling wine terrifies them, because elsewhere, the profit margin is razor thin. No one cares, that when they buy proteins by the pound, they're also paying for skin, bones, scales and fat. Customers probably don't know, and the purveyors could give a shit less... The price is the price. And in a down economy, wines are the first thing customers cut back on.

A homemade steak will NEVER be as good as one of these places. They have equipment that will infuse and keep flavor unlike any cast iron pan you can use. Its not even really an opinion, there's a reason steakhouses can charge this much and still be booked for weeks in advance. You can get to maybe 80% of the flavor of a nice steakhouse steak, but you'll never match it, no matter how good a home chef you are unless you have access to their meat suppliers and their 10 thousand dollar grills and master chefs
