Wow, you freaked me out at first with the 75 degrees, until I heard you call the French Fries - Chips. Then I rewound to see the Celsius.

Leg and thigh meat is still safe at 165°F, but it is recommended to cook it to an internal temperature of about 170-175°F (77-79°C). The chicken’s legs are actively worked muscles, and the meat is tougher because of it.

when you covered that in olive oil you effectively put on a barrier to STOP the smoke being absorbed into the chicken, as smoke can not penetrate oil. If you feel you need a binder to hold the rub, try something like mustard (for pork), which burns off and does NOT effect the flavor. Or even just water. But, honestly I never found I needed a binder much. Most fowl and meat are normally moist enough to hold the rub just fine. This is a #Fail

Are you actually using regular chemical firefighters? No thanks! Definitely do not want chemicals involved in my cooking process.

Pretty sure that's just paraffin wax. They don't smell at all. Use one cube for an entire chimney. Better than paper or those horrid hydrocarbons. Give it a try.
