@@GallaghersGrub it's going to be really nice. However I don't expect any profitability until maybe 2022 at the earliest. Currently I put any profits right back in. I drive truck Monday through Friday each week. I'm currently 61 , I intend to retire from driving by 65. For now it's all about getting my business legal and aquireing all the equipment and facilities needed ( commercial kitchen, food trailer, walk in coolers, etc. ) So when I permanently step out of trucking I'm all set with everything I need including a good customer base. The hard part will be the next two years doing one job full time while also building a new business. But I look forward to this challenge. That's why I went with this new smoker. I don't know if you watched the video by Criss on it but for example it has enough fuel capacity and is so efficient it can hold at 225 °f for 30 to 35 hours before adding fuel. I'll never do a cook that long but it does mean I can fire it up on a Friday night, load it, and have fully cook brisket the next morning and not have to babysit the meat. Anyway, I apologize for going on about this but as you might imagine I'm very excited. Come on February. 😄🔥

Thanks for the video. I'm new to BBQ and so far my issue is getting, and keeping, a consistent heat in the BBQ without having to add or change coals. I worry that if I tried this recipe, either the BBQ would get cold by the end or it would be so hot that the chicken gets incinerated!
@GallaghersGrub
@GallaghersGrub 9 ай бұрын
Stick with Kingsford charcoal briquettes if you're just starting out. They burn consistently, and don't burn too hot. Then regulate the temperature with the vent on the bottom and lid. You'll get the hang of it in no time. You may even want to practice doing a longer cook without any food on there.

Beer can chicken is kind of a gimmick.... the beer needs to get to 212* which it can't do in the chicken to boil, The thing that makes the chicken juicy is the way it is cooked, standing the chicken up makes the juice(fat) from the bird self baste the breast. I've done test (you should too and video it) and an empty can did the same for me as a can with liquid in it. Still was a great looking bird, and happy 100!
@GallaghersGrub
@GallaghersGrub 3 жыл бұрын
It's interesting Toby. I have seen quite a few articles debunking it. But in practice, I get great results every time. I would think that since the bottom 1/4 of the can is exposed to 375 degree heat for an hour and a half, the contents would steam. Regardless, it makes for a great bird and is sure to impress your friends. Cheers man!
