Arequipa stuffed Rocoto Recipe:
Stuffed Rocoto Ingredients: (2 servings)
Rocoto (2 Units)
Lemons (2 Units)
Onion (1/2 Unit)
Yellow pepper (1/2 Unit)
Ground or minced meat (200 g.)
Carrot (1/2 Unit)
Peas (50 g).
Cheese sheets (50 g)
Ají panca Paste (1 Tbsp.)
Egg (1Unid.)
Roasted and ground peanuts (2 Tbsp.)
Garlic paste (1 tsp.)
Dried oregano (1/2 tsp.)
Cumin (1/4 tsp.)
Pepper (1/4 tsp)
Salt (1 tsp.)
Vegetable oil (3 Tbsp.)
Red wine (2 Tbsp.)
Mix (1 Cup of milk, 1/2 tsp. Salt, 1 Unit. Egg and 2 Tbsp. Oil)

Arequipeño Stuffed Rocoto Preparation:
Clean the rocks well as indicated at minute 1:41. Previously boil 1 egg, peas and carrot. Remove the spice from the hot pepper as indicated at 6:18 and set aside. Next, prepare the filling for the stuffed hot pepper: add 3 tablespoons. of vegetable oil and wait for it to heat up a little. Add the chopped onion, garlic and yellow pepper, fry until the onion changes color. Add the ají panca and fry well. Then add the meat and fry until its juices are released, season with salt, pepper, and cumin. Add wine and wait for the alcohol to evaporate. Add the peanuts, integrate and add water little by little until it has the right consistency (not watery !!), finally add the dried oregano to reserve. Previously preheat the oven to 180 ° C / 10min. Fill the rocotos adding the filling, a slice of egg and the cheese. In a container for the oven, add a bed of potato slices and place the stuffed peppers on top, then add the mixture and bake for 15-20 minutes. Remove and serve !!!
