Just moved into a home that has a Viking commercial oven in it, larger than the one shown in this video which is what led me here bc I was doing searches on this oven. I LOVE this thing. I do all the cooking in the home and I just don't deserve an oven this badass. Just simply in love with my Viking oven!

Helpful review. Wish this thing had gliding oven racks. Are you saying the ovens on all these commercial style stoves can't hold a steady temperature?

I’m saying that “steady” is a relative term when baking with various fuel types. Electric ovens just keep a more consistent temperature than all gas ovens. All gas ovens are probably way more consistent than the oven in an old wood burning stove. 😁

Viking was bought by Middleby Corp. in 2013. Viking had been having a lot of technical issues up to that time. Since the acquisition Viking has become one of the best once again. Mike.

I moved into a place with an original of this oven and just discovered the drip tray after a year. Can confirm it’s an unpolished SS and it glides much smoother

Would you be willing to drill holes into the center plate of your porcelain deck? There’s little nib like protrusions that seat into holes on the middle plate. I suppose you could also try ordering a replacement center plate from a more modern range but there’d be no guarantee that it works fit on the older deck. 🤔

Hi I have exactly this model, however my tenant at this moment are telling me that the oven is getting super hot in the back and at 400 degree the oven is reigniting every other minute. do you have any idea what is the problem? I had 2 repair man and each has said different idea...

How would you compare this range to a Wolf, Ilve, or Lacanche?

They’re all very different ranges. This is very similar to the Wolf all Gas Ranges. The Wolf All Gas has sealed burners and probably a little more refinement in the details of the manufacturing process. The Lacanche is designed to look like a La Cornue but feels more like a 1970’s/80’s General Electric Stove.

I purchased a 6 burner 36" viking series 5 sealed burner and I truly dislike it immensely. It is my second viking range that I have owned. The one I have now has a cooling fan that keeps running for a very long time, at least a half an hour or longer. I think it is very loud and annoying. My first viking gas range did not do this at all, there was no cooling fan just a convection fan. I wanted a strictly gas range without any electronic controls. I have spoken to viking customer service several times and received what I believe to be deception. I asked if they change the design of their range and they said no. I then asked why did my older model not have this cooling fan, and was told it was an improvement. I said that is a new design why did you just tell me it was not redesigned. I believe they screwed up this unit by trying to reinvent the wheel. I cannot wait to get rid of it. I believed my seven plus thousand dollars could have been spent on something of value and not on some design engineers hairbrain idea.

Most newer ranges have cooling fans for the electronics when the oven is over a certain temperature. It probably means they had issues with something overheating on a previous design. We used to get a ton of complaints on them but most manufacturers have figured out how to have them run quieter. How loud is the fan noise? I wonder if you can get them to have service come out under warranty and try to make the fans run at a lower speed or figure out a noise isolation solution.

I cook every day and this range makes cooking a chore. The metal rings are not easy to clean and low flame is almost in achievable. The greatest are super heavy and also hard to clean.

Sealed means the burners are bolted to the porcelain deck below. On this Viking, there's an opening around the base of the burner that leads to a compartment below with a drip tray.

Z Line is just a badge. It looks like a rebadged Bertazzoni to me. That or the new Bosch Pro Style, or the Fisher Paykel, or the Verona… they’re all cheap…they all look similar, they all probably come from the same factory in Italy. I don’t think I’d put them in the same league as a Viking 5 series though.

As of 2023, ZLine (founded by Andy Zuro) are still designed in Reno Nevada. Major parts of Zline appliances are manufactured in the USA (Ohio and Tennessee), Italy (the burners), and Germany. Collecting these parts, Zline assembles their products in China. They have their own facilities in China.
