Parsnip Pie:
1.5 Cups cooked mashed parsnips
1/2 C Honey or Maple Syryp
1 C Whole Milk
1 tsp vanilla extract
3 egg yolks
1/2 tsp cinnamon
1/2 tsp nutmeg
Blend together until smooth, pour into prepared pie crust in 9" pan (does not need to be pre-baked crust) and cook for 35-40 min or until center of the pie is set.
Cool, slice, enjoy!

So funny to see Betty Crocker. I have one from my mom. I also have a 43 year old rolling pin and sifter I bought I when I was in college. And I bought those plates when my daughter bought her new home five years ago. Makes me think of home. Think I’ll make a pumpkin pie. 🥧

Yeah the pie was basically a health food, right? Haha ♥ Health food in disguise lol! Canning parsnips is a great way to preserve them and have them ready for meals. Mashed parsnips are so good and you can use canned parsnips for that too!

I like parsnips. They are sweeter if they take a frost before harvesting them. We had a neighbour who made parsnip wine. I remember it being very good. Thank you for reminding me about parsnips. They are going on the grocery list. 😊

I remember those parsnip burns, they were awful Heather! I am so glad the pie turned out well, pumpkin pie isn't one of my favs lol.. but I do like sweet potato pie. I adore carrots, so I bet I'd like this pie. I love your vintage cookbook there! I'm pretending I didn't already know that hahahahaha (Tater!). Love the magazine having info about topics I want to learn more about, and the bits of humor with the cartoon is a nice touch lol. I think the cutout totally looks like Feral, it worked out well - not a fail! I chuckle sometimes as have always been told/said baking is a science and need to follow the recipe. But, as time has progressed have learned that is clearly not always the case, the measuring with the heart or eyeballing it and everything still working out well makes me happy. Your marble roller is amazing, I'd keep it too. I don't know if the hole is clear all the way through but you could probably get a wooden dowel or even a metal dowel/rod and use that as a makeshift handle. 💚🥧💚

I have the same cookbook. aunt bought me one in 1971 and it crumbled into pieces. My second one, the one you have, I purchased about 2000 or so. I am 71 so it should last me for the rest of my life

I agree that parsnips are so tasty and can be used many ways! (Side note: Have you ever started to say a word multiple times and felt like you weren't pronouncing it right so just chose a different word or group of words to say the same thing? Well I just did that, only with typing. LOL) The goat that "did a header" into your pie looked awesome! And it DID resemble Feral!

Hey! You can say your rolling pin is a French rolling pin! (Of course, it's not tapered like they are, but it's close!) The pie looked good! Cute cartoon! It's too bad the advent doors don't have better perforations so they can be re-closed and keep the pieces inside until you're ready to put them all together.

If you grow the parsnips again, you might try harvesting them with kitchen rubber gloves. They are longer so they should protect your arms. I have to assume that you will not be willing to hug them again. 😱
