Also surprisingly filling. When I was pan frying the Sweet Potato's with the spice mixture. I think the fried sweet potato's could be good on there own served with BBQ Beef Burt Enz. Thanks Kelly for sharing such wonderful recipes.

There are only 4 campsites here on the lake! So all 4 are spread out with lots of privacy. I hosted them in campsite one my favorite to camp for many reasons. Camp site one has additional parking at entrance maybe a trailer is something you’ve brought out with additional gear to have close. The road getting to the other sites can be a bit rough. Campsite one also has a nice size flat area for additional tents. This site also has that amazing ledge for easy entry to the lake. It also has a couple of tables, the best part is you get less echoing from the other campers! Also I just wanted to mention that these are primitive camping. We do have primitive toilets 🤣 campsite one is the closest to them if you’re not prepared with those comforts. Hope this information is helpful! Please come say hello I’m Melody

@CodyandKellie4 жыл бұрын
Thank you for watching! here is the recipe. Grilled Black Bean and Sweet Potato Quesadillas Ingredients: 1 teaspoon Frontier Smoked Ground Paprika 1.87 oz. 1/2 teaspoon Frontier Organic Garlic Powder 2.33 oz. 1/4 teaspoon Frontier Table Grind Sea Salt 5 lb 1 medium sweet potato 1 tablespoon olive oil 1/2 cup black beans, drained and rinsed if using canned 2 tablespoons fresh minced cilantro 1 tablespoon lime juice 4 ounces shredded Mexican cheese blend 4 10-inch flour tortillas 1 dash olive oil, for brushing Directions: 1. Light grill to medium heat. 2. Peel sweet potato and cut into 1/4” thick rounds. Place in a frying pan and combine with olive oil, smoked paprika, garlic powder, and salt. 3. Fry sweet potatoes for 3 to 4 minutes until lightly charring, flip, and continue to cook for another 3 to 4 minutes. Sweet potatoes should be tender. Remove from heat, let cool slightly, and chop into smaller pieces. 4. While sweet potatoes are cooking, combine black beans, cilantro, and lime juice in a bowl, set aside. Once sweet potatoes are chopped, add to the black beans. 5. To assemble quesadillas, on one side, brush with olive oil and sprinkle with a pinch of garlic powder. Flip the tortilla over and add 1 ounce of cheese over the entire surface and then on one half, divide 1/4 of the sweet potato/black bean mixture. 6. Transfer quesadilla over indirect heat on the grill and allow to cook until the cheese has melted. Fold in half and transfer to direct heat. Allow to cook until the tortilla is golden and crisp, 15 to 60 seconds (depending on the heat source). Flip and repeat. Repeat with remaining tortillas and filling.

Another fantastic video, I am truly enjoying the memories of my youth that your channel is bringing back. If you ever get the chance, I think you two would thoroughly enjoy the Upper Peninsula of Michigan and the Arrowhead of Minnesota. I have not camped out at all up there, but it sure does look like it would be awesome. I have traveled them rather extensively for work and vacation, but I have not camped, (my camping days are over). But if you two ever get the chance, I think you would absolutely love it. I spent my early adulthood traveling and exploring every opportunity I could, and now that I have seen the UP of Michigan and the Arrowhead of Minnesota, I wish I had explored them at that time, I am certain that I have not even scratched the surface of what is available up there. If you ever decide to do this, feel free to reach out to me, and while I do not know of exact camping locations, as in, "where to literally pitch your tent", I can tell you some of the absolutely stunning scenery I have witnessed. Northern Minnesota has been one of my biggest surprises, I had no idea how beautiful it is up there. I had always heard of Michigan's UP, and expected it's beauty, but Northern Minnesota was a shocker, I had no idea. Obviously, this is a summer activity....

Y’all are hilarious. The quesadillas looked great, gonna try that soon. My daughter and I made our version of the balsamic veggies that you made in another video and it turned out great. Since you didn’t put a recipe in that video we looked up similar recipes and most were called ratatouille, but without any balsamic. BTW y’all are going to bed suspiciously early!! 🤭 oh, and great job on the cleanup, I hope you are blessed.
@CodyandKellie4 жыл бұрын
Thank you for watching! Yes that recipe is similar to ratatouille.

Awesome video! This place is absolutely gorgeous. Are RV's allowed?
@CodyandKellie4 жыл бұрын
Thanks for watching! I’m not sure about an RV. The road is really tight driving through the loop. There is a KOA around the other bend of the lake.

Quesadillas looked fantastic. I love that camping spot, I just need to know how to find it. I'd read allot about Beaver Lake, but never made it that far south. I think I'll check it out this fall, after it cool's off.

Love the video. Saw your drone and have been looking at that one. How do you like it?
@CodyandKellie4 жыл бұрын
Thank you for watching! Oh we love it! We also got the smart controller and two extra batteries so we can have a longer flight time. Each battery give you 30 mins. So having and hour and a half of flight time really gives you the time to make sure you get the shots you want. We also like the smart control because if you did not have that, you have to use your phone which then uses the battery life there.

Why do you leave you car door open all the time ?
@CodyandKellie4 жыл бұрын
LOL That is a very popular question. When we are around the vehicle and camp, we get in and out alot, and just leave everything open. But when we are done getting in and out alot we will shut them all. At night we close them, and when we leave camp we close them. However, they really are not open very long.
