I think the elder guadian was once a fish, but the witch saw the fish so she had an idea to use it on her experiments, but she accidentally spoil a potion on it and because of its size it destroyed the cauldron and the floor making its escape, and when it was in the pond it found its way to the ocean and it got bigger and bigger, the acient builders made the monument but when they were about to block the exit one guardian attack the builder making them become the Drown.

It's probably there to protect the gold and you need it to make netheright and its an elder so it might know the backstory of the ancient debree and it's "debree" so it has to come from some thing that got destroyed.

It's man made by the ancient builders to protect the ocean monument to store the gold as they were going to experiment with the newly found ancient debris and there's only 3 elder gaurdians because thats all they could make before the ancient super wither killed most of them and they took refuge in the stronghold where they tried to go to another dimension (as they did with the nether.) I found out in the new update that the elder guardian drops a smithing template so that just supports this theory even more. I think that it doesn't drop anything good as it is like the warden. It isn't supposed to be killed.
